HAM, SWISS AND RED ONION ENGLISH MUFFIN MELT

This recipe came off of an Earthgrains English Muffin bag. It is very yummy, and well worth any time put into it. You can sub different cheeses if wanted....but Im not sure if all would be as good. I do like it with Provolone though.

Ham, Swiss and Red Onion English Muffin Melt image

Steps:

  • Toast the english muffin halves in a pre-heated broiler.
  • Spread a little butter on each peice and then some mustard after the butter.
  • Top each with 2 oz of ham, 1 slice red onion and then 2 slices of your cheese.
  • Place on baking sheet and broil until cheese is melted (about 4-5 minutes).

Ham & Swiss on Rye Strata image

Steps:

  • Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
  • While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
  • Whisk together milk, egg, thyme, pepper, and salt.
  • To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese. Repeat layers. Gently pour egg mixture over layers and top with remaining 1/3 swiss cheese. Cover tightly with aluminum foil and refrigerate* at least 4 hours, preferably overnight.
  • To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
  • Let strata rest 5 minutes before serving.
  • *Refrigeration time not included in recipe prep/cooking time.

Baked Ham & Swiss With Mushroom Sauce image

Steps:

  • Preheat oven to 350°F
  • Heat butter in non-stick pan at med-high heat.
  • Chop mushrooms & onions, add to pan and cook till tender. Stir while it cooks.
  • Mix in flour and then gradually add milk until mixture begins to thicken.
  • Add spices, stir & remove from heat.
  • Cut croissant in half, lenghwise. Place bottom halves on a cookie sheet. Layer each bottom half with ham first, 1/4 mushroom sauce & then 1 slice of cheese. Cover with the top of the croissant.
  • Bake for 15 min or until cheese has melted.

Steps:

  • Put 2 tablespoons butter, the onions and 1 teaspoon salt in a medium skillet over medium heat. Cook, stirring occasionally, until the onions begin to soften and release liquid, 10 minutes. If the skillet becomes a little brown, add 1 to 3 tablespoons of water, 1 tablespoon at a time, and scrape the bottom with a wooden spoon to release the browned bits and prevent burning. Add 1 teaspoon sugar and cook, stirring occasionally, until the onions are golden brown and soften, 10 minutes.
  • Form the ground beef into four 6-ounce patties (about 1/2 inch thick). Season the patties on both sides with several cracks of pepper and 1 tablespoon salt total.
  • Heat the oil in a 12-inch cast-iron skillet or large skillet over medium high heat until shimmering. Add the patties and cook to your desired degree of doneness, about 4 minutes per side for medium rare or 5 minutes per side for medium.
  • Meanwhile, make the special sauce. Stir together the mayonnaise, ketchup, relish, horseradish, Worcestershire sauce, remaining 1 teaspoon sugar and 1/4 teaspoon salt in a small bowl. Set aside.
  • Generously spread the remaining 1 tablespoon butter on the outsides of the English muffins. Put the tops, buttered-side down, in a large nonstick skillet over medium-low heat.
  • On each top, add 2 teaspoons of the special sauce, 1 cheese slice, 1 tablespoon caramelized onions and 1 patty. Top each patty with 1 tablespoon caramelized onions, 1 cheese slice and 1 English muffin bottom. Cover and cook until the bottom cheese slice melts, 2 to 3 minutes. Flip using two spatulas, cover and cook until bottom cheese slice melts and the English muffin is toasted, 2 to 3 minutes. Serve with the remaining sauce.
