TOMATO QUICHE
I first tried this recipe at a family gathering and loved it! It is a great meatless lunch or dinner for a warm day, served hot or cold. This is my most requested dish for parties and a fairly simple one to make. Enjoy! -Heidi Anne Quinn, West Kingston, Rhode Island

- Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling. In a large skillet over medium-high heat, saute onion in butter until tender. Add the tomatoes, salt, pepper and thyme. Cook over medium-high heat until liquid is almost evaporated, 10-15 minutes. Remove from the heat. , Sprinkle 1 cup cheese over crust. Cover with tomato mixture; sprinkle with remaining 1 cup cheese. In a small bowl, beat eggs until foamy. Beat in cream. Pour over filling. , Bake 10 minutes. Reduce heat to 325°. Bake until top begins to brown and a knife inserted in the center comes out clean, 35-40 minutes longer. Let stand 10 minutes before cutting.

Steps:
- Heat oven to 400.
- Place pie crust in 9-inch glass pie plate as directed on box for one-crust filled pie. Do not prick crust. Bake 8 to 10 minutes or just until edge begins to brown (if crust puffs up in center, gently push down with back of wooden spoon).
- Meanwhile, in medium bowl, beat eggs, milk, flour and Parmesan cheese with wire whisk until well blended.
- Layer ham, tomato, onions and Cheddar cheese in partially baked crust. Pour egg mixture over layers.
- Cover crust edge with strips of foil to prevent excessive browning; bake 25 to 35 minutes or until golden brown and knife inserted in center comes out clean. Let stand 10 minutes before serving.

- Preheat oven to 350 degrees. Pat into a 9 inch deep dish pie plate the uncooked crescent roll dough to form a crust. Sprinkle in 1/2 cup of cheese on bottom and top with ham and tomato. In a medium bowl, mix together the eggs and cream. Season with salt and pepper. Pour into pie plate and top with remaining cheese. Bake for 40 minutes or until firm.

- Pre-heat oven to 200 C/400°F.
- Mix flour, salt and butter until crumbly
- Add water and mix until dough is formed.
- Roll out dough until 1 cm thick.
- Place pastry in quiche mould and prick base.
- Chop ham and tomatos and arange in pastry case.
- Mix beaten eggs and milk together.
- Pour the mixture inside the quiche
- Sprinkle on grated cheese to taste.
- Bake in oven for 20-30 mins until golden brown.

Steps:
- Heat oven to 400°F.
- Pre-bake the pie shell for 5 minutes. After you have removed the shell from the oven, lower the oven heat to 350°F.
- While the crust is pre-baking, mix the ham, cheese, and basil and set aside.
- Spread mustard on the bottom of the pie crust. Sprinkle with ham-cheese mixture.
- Beat eggs, cream, and pepper well. Pour over the ham and cheese in the pie crust. Sprinkle with Parmesan.
- Bake for 30-35 minutes, until set and lightly browned.
