Toffee Crunch Cookies image

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
  • Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

1 cup (2 sticks) butter
1 cup light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (10-ounce) bag toffee candy bits
1 cup oatmeal
1 cup sweetened flake coconut
1 cup chopped whole, skinned almonds

Steps:

  • Preheat oven to 350 degrees F.
  • Sift together flour and baking soda.
  • Cream together butter, sugar, brown sugar, and vanilla.
  • Add eggs one at a time.
  • Add toffee pieces to mixture.
  • Mix creamed mixture and dry mixture together.
  • Use rounded tablespoon to measure dough.
  • Place dough at least 2 inches apart on baking sheet.
  • Bake for 10 to 12 minutes.
  • *If you have time to chill the dough before baking, do so! You will have cookies that are crisp on the outside and chewy on the inside.

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and sugar until fluffy; beat in egg yolk.
  • Mix flour, salt, and cinnamon; beat into butter mixture.
  • Pat thinly into un-greased 15 1/4 x 10 1/4-inch baking pan. Lightly beat egg white and brush over batter. Sprinkle with nuts.
  • Bake 25 minutes or until firm to touch.
  • Cut into squares while still warm.
  • Tips: These cookies are also attractive cut diagonally into diamonds. After cutting, remove them from the pan to cool.
