Delicate angel hair pasta served with spinach, tomato and lime sauce, a treat indeed! From the Pasta cookbook. You may substitute lemon for the lime, if desired.

Heavenly Angel Hair Pasta image

Steps:

  • Combine the tomatoes, spinach, garlic, lime zest and juice in a bowl. Stir in the Tabasco sauce and olive oil, cover and set aside for 20-30 minutes.
  • Bring a large pan of lightly salted water to a boil and cook pasta until done, about 10 minutes(less for al dente).
  • Drain the pasta and return to clean pan. Add the tomato mixture and toss well. Season with salt and pepper to taste. Add the Parmesan cheese to taste, toss again, and serve in warm bowls, with extra Parmesan on top, if desired. Enjoy!
  • Note:.
  • You could substitute young sorrel leaves or rocket for the spinach, and lemon juice and rind for the lime.

1 lb very ripe tomatoes, peeled and chopped
1 bunch of tender Baby Spinach
5 garlic cloves, crushed
1/2 lime, zest of
2 limes, juice of
1/4 teaspoon Tabasco sauce (to taste)
2 ounces angel hair pasta (capellini)
3 -4 tablespoons olive oil

parmesan cheese, freshly grated

DEVILED FRITTATA AND HEAVENLY ANGEL HAIR PASTA

This pairs a mayo-free, warm, spicy take on deviled eggs with a pasta favorite from Trattoria Garga in Florence. The original "Pasta Magnifico" is richer with more cream and liquor rather than wine. This lighter version is molto bene for brunch or a late night bite. Your pick - it's always brunch somewhere.

Deviled Frittata and Heavenly Angel Hair Pasta image

Steps:

  • Preheat oven to 400 degrees F.
  • Bring a large pot of water to a boil. When it comes to a boil, salt the water and cook angel hair pasta to al dente, 5 minutes.
  • Heat 3 tablespoons extra-virgin olive oil, 3 turns of the pan, in a large nonstick skillet over medium-low heat. Add onions and gently cook 5 minutes. Do not caramelize the onions just let them get translucent and sweet. Add celery, garlic and olives and season with paprika, salt, and pepper. Stir in mustard and hot sauce. Beat together the eggs and 1/4 cup of the cream (eyeball it) and pour into the pan. Stir in the parsley and let the eggs settle and form a foundation, as you would for an omelet. Transfer the pan to the oven and bake until golden, 12 minutes or so. Garnish with the paprika after you remove the frittata from the oven.
  • Heat the remaining extra-virgin olive oil in a deep skillet over medium heat, 2 turns of the pan. Add shallots and cook 5 minutes. Add zest and wine then reduce a minute or so more. Add the remaining 1/2 cup cream, reduce 2 minutes. Add 2 ladles of starchy cooking water from the pasta to the sauce pot just before draining. Toss pasta with cheese and season with salt and pepper. Transfer pasta to a bowl and garnish with a large amount of fresh basil. Yum-o!

1 pound angel hair pasta
Salt
5 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
2 ribs celery and greens from the heart, finely chopped
2 cloves garlic, finely chopped
1/4 cup green olives and pimiento, finely chopped
1 teaspoon paprika, plus more for garnish
Black pepper
2 rounded teaspoon Dijon mustard
1 tablespoon hot sauce
12 large eggs
3/4 cup cream
A handful of flat leaf parsley, finely chopped
2 shallots, thinly sliced
1 orange, zested
1 tablespoon plus 1 teaspoon lemon zest
1/2 cup white wine
1/3 cup Pecorino Romano, a very generous handful
10 to 12 basil leaves, torn or shredded

Blushing Angel Hair Pasta image

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

Steps:

  • Cook pasta according to package directions.
  • Drain well and set aside to cool.
  • Mix salad oil, steak seasoning and lemon juice and pour over pasta along with olives.
  • Cover and refrigerate overnight.
  • Just before serving, add mayonnaise, water and onions.
  • Toss and serve with Parmesan on side.
  • NOTE: Cook time refers primarily to chill time.

1 (1 lb) box angel hair pasta

this is my recipe for home pasta. it is the only way to enjoy pasta. You will also need a hand-rolling pasta maker. I bought a cheap one from bed bath & beyond and it broke after 3 uses. I have included a link to a good one below. Learn from my mistakes - buy a decent one and never clean the machine with water. It will break like mine did, in the middle of making pasta for my team at work during our Christmas party. Homemade Angel Hair Pasta image

Steps:

  • Put 3.75 cups of all purpose flour in a large mixing bowl.
  • Create a crater in the middle and break all 5 eggs into the middle of the crater.
  • With a fork, blend the flour and eggs together.
  • Once it starts to create a doughy mixture, mix it together with your hands. If the flour is not completely binding with the eggs, I add a little water to get it to a good consistency.
  • Create a ball of dough from the mixture, dust with some all-purpose flour and cover with a damp paper towel. Wrap the dough and paper towel in plastic wrap and put into the fridge for 1 hour.
  • Cut the dough into 3 or 4 pieces. I would suggest 4 pieces for beginners.
  • Take one piece of the dough you have previously cut out of the fridge and cover the rest.
  • Dust the pasta machine with flour and set the machine at the widest setting. Usually the settings are numbered 1-9, 1 is usually the widest.
  • Roll the dough through the machine. Fold in half and repeat. I usually repeat this several times so that the dough has a good consistency.
  • Set the pasta maker at the 2 setting and roll the dough through. Move to the next setting and repeat. Gradually the dough will get longer and you will end up with a long sheet. I stop at eigth setting (9 is way too thin).
  • With semolina, Dust the dough sheet on both sides and dust a large sheet pan. Cut the sheet of dough to the width of a sheet pan.
  • Run the sheets through the cutting attachment on the machine ( i like the angel hair setting, linguine is pretty doughy) and lay down on the dusted sheet pan. Repeat all steps until every piece of dough is cut into angel hair pasta.
  • If you don't plan to cook immediately, cover with a well wrung out paper towel and tin foil and put in the fridge.
  • Bring a large pot of water, salt and a splash of olive oil to a boil.
  • Cook pasta for 2 minutes and drain.
  • Mix in a small amount of olive oil to prevent sticking.
  • Add to your favorite sauce and enjoy!

Heavenly Spaghetti image

Steps:

  • 1. Cook & drain spaghetti.
  • 2. Saute meat & mushrooms. Add spaghetti sauce, salt and pepper.Set aside.
  • 3. Combine cottage cheese, cream cheese, sour cream and onion. Set aside
  • 4. Pam a 9 x 13 inch pan and layer 1/2 the angel hair; 1/2 the cheese mixture & 1/2 the meat sauce.
  • 5. Add remaining spaghetti; cover with remaining cheese mixture; drizzle melted butter and top with remaining spaghetti sauce.
  • 6. Chill at least 2 hours but remove from refrigerator 20 minutes before baking.
  • 7. Bake at 350 degrees for 45 minutes
  • 8. Let sit 10 minutes before cutting into squares to serve.
