CRAB MAYONNAISE WITH MELBA TOAST & HERB SALAD

- To make the crab mayonnaise, put the egg yolk and mustard in a medium bowl and whisk together. Add a drop of the oil and whisk until completely combined. Gradually add the oil, a drop at a time, then in a thin trickle, whisking continuously until you have a thick mayonnaise. Whisk in the lemon zest and juice, stir in the crabmeat and season to taste. This mix can be made a few hours ahead and kept in the fridge.
- For the Melba toast, heat the grill to high. Place the bread on a baking sheet and toast on both sides until lightly browned. Cut the crusts off the toast, then carefully cut through the middle of each slice horizontally to give you 2 thin slices. Cut each of these into 4 triangles. Put the triangles, untoasted-side up, on the baking sheet and place back under the grill to brown - if they curl up slightly, all the better. The toast can be made a day ahead and kept in an airtight container.

Steps:
- Toast the bread slices on both sides, under the grill or use a bread toaster.
- Cut off the crusts, lay the slices flat on a cutting board, put your hand on top of it, and using a serrated knife slide through the bread to split it, or hold it in your hand and cut through it rotating the slice of bread.
- If you want, cut these thin slices into a triangle.
- Do these above steps while the bread is still warm otherwise the bread will crumble or break.
- Then you toast the untoasted sides under the grill until golden.
- The sides will curl up; keep your eye on them because this will go very quick.
- This can be made well in advance and kept in a tin.
WARM BRIE WITH FUJI APPLE, PEAR AND MELBA TOASTS

- Quarter apple and pear lengthwise and cut into each quarter on an angle to remove the core. Slice apple and pear into 1/4-inch thick slices. Squeeze a little lemon juice over the fruit to slow browning.
- Cut the top rind off the brie and place in the microwave on high for 60 seconds. Depending on the ripeness of the cheese, it will take 60 to 90 seconds on high to heat and melt. If brie is not yet soft and hot after 1 minute, place it back in microwave for another 30 seconds on high.
- Serve the softened, warm brie with a platter of fruit and Melba toasts for dipping and spreading. Reheat brie if it tightens up for 20 to 30 seconds at a time on high.
HERBED MELBA TOASTS
Can be prepared in 45 minutes or less.

- In a small bowl stir together the butter, the dill, the thyme, and salt and pepper to taste. Roll each slice of bread as thin as possible with a rolling pin and trim and discard the crusts. Brush both sides of the bread with the butter mixture, cut each slice diagonally into 2 triangles, and bake the triangles on a baking sheet in the middle of a preheated 350°F. oven, turning them once, for 15 minutes, or until they are browned lightly and crisp. Let the toasts cool on the rack.
BUTTER BEAN PâTé WITH MELBA TOAST

- Heat the oil in a pan, then gently cook the shallot and garlic for 5 mins until softened. Transfer to a large bowl. Add the butter beans, then mash together until roughly puréed. Stir in the soured cream, parsley and seasoning. Cover and chill until ready to serve.
- Meanwhile, place the slices of bread under a medium grill and gently toast on both sides until light golden. Cut off the crusts and, using a long, sharp knife, split the bread in half, through the centre. Place the bread, untoasted-side up, under a low grill until it curls into a crisp, golden shell. - In a small bowl, combine butter and seasonings. On a lightly floured surface, roll dough into a 12-in. square. Spread with butter mixture to within 1/2 in. of edges; sprinkle with cheese. , Fold dough into thirds. Cut widthwise into 24 strips. Twist each strip twice; pinch ends to seal. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 40 minutes. , Beat egg and water; brush over dough. Sprinkle with sesame seeds. Bake at 375° until light golden brown, 10-12 minutes. Remove from pans to wire racks.
