Steps:

  • In a large bowl, cream the shortening, butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg, milk and vanilla. Combine the flour, cocoa, baking powder, salt and cinnamon; gradually add to the creamed mixture. Cover tightly and refrigerate for 8 hours or overnight. , On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a lightly floured 1-1/2-in. round cookie cutter; place on ungreased baking sheets. , Bake at 375° until set, 6-8 minutes. Cool for 2 minutes before removing to wire racks to cool completely. , In a large bowl, combine all the peppermint layer ingredients. Knead for 1 minute or until smooth. Shape into 120 balls, 1/2 in. each. Place a ball on each cookie and flatten to cover cookie. Place on waxed paper-lined baking sheets; refrigerate for 30 minutes. , In a microwave, melt chocolate chips and shortening; stir until smooth. Spread about 1 teaspoonful over each cookie. Chill until firm.

  • Heat oven to 400°F. In large bowl, mix 1/2 cup powdered sugar, the butter and vanilla. Stir in flour, nuts and salt until dough holds together.
  • Mold portions of dough around pieces of caramels to form 1-inch balls. On ungreased cookie sheet, place balls about 1 inch apart.
  • Bake 10 to 12 minutes or until set but not brown. In small bowl, place additional powdered sugar. Roll cookies in powdered sugar while warm. Cool completely on wire rack, about 30 minutes. Roll in powdered sugar again.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  • Beat butter, white sugar, and brown sugar together in a bowl until smooth and creamy. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
  • Whisk flour, baking powder, and salt together in a bowl. Gradually add flour mixture to butter mixture until dough is just-combined. Transfer dough to a resealable plastic bag, squeeze out excess air, and seal bag. Refrigerate until dough firms, at least 2 hours.
  • Divide dough into 42 portions and wrap 1 dough portion around 1 mint. Repeat with remaining dough portions. Place dough 2-inches apart on prepared baking sheets.
  • Bake in the preheated oven until edges of cookies are golden, 10 to 12 minutes.
  • Melt remaining chocolate mint candies in a microwave-safe glass or ceramic bowl in 30-second intervals in the microwave, stirring after each melting, for 1 to 3 minutes. Drizzle melted mint chocolate over cookies.

  • 1. To make cookies, mix flour, cocoa, baking powder, salt, and cinnamon. Beat shortening, butter, sugar, egg, milk, and vanilla in a large bowl with electric mixer until well blended. On low speed, gradually beat in flour mixture. Divide dough in half. Cover and chill 3 hours.2. Heat oven to 375°. Have baking sheets ready.3. Roll half of the dough at a time into a 1/8 -inch thick circle on a lightly floured surface. Cut into 1 1/2 -inch circles. Place on baking sheets. Bake 6 to 8 minutes until firm and lightly browned. Cool on baking sheets 1 minute. Remove to wire racks to cool.4. To make topping, mix powdered sugar, corn syrup, melted butter, and peppermint extract.
