CLASSIC MEATBALLS
This homemade meatball recipe is a Betty classic, and for great reason! For generations, home cooks have relied on this hearty meatball recipe to show some skills the kitchen. All it takes to achieve this meaty main dish is eight basic ingredients. Got them? Great! Steps:
- Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.
- In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
- Bake uncovered 18 to 22 minutes or until temperature reaches 160°F and no longer pink in center.

Steps:
- Using your favorite recipe for meatballs.
- Decide on what size your meatballs will be.
- Figure out how many meatballs per pound.
- Make meatball mixture in 5 lbs batches.
- Chill well.
- Using a rolling pin, roll out 5 lbs of chilled meatball mixture into a large rectangle.
- Use a pizza cutter to cut.
- Example: Small meatballs= 20 per pound; 5 X 20= 100; Halve the mixture 2 x 50; 10 x 5 and so forth.
- Form balls out of the square pieces of meat mixture.
- Place on greased baking sheet.
- Bake at 350 F until done.
- These should be turned once during cooking.
- Drain, cool and place in gallon ziplock bags until ready to heat.

- Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil and drizzle with olive oil. Set aside.
- In a large mixing bowl, combine the cubed Italian style bread and milk. Set side for 2-3 minutes until bread is softened. Using your fingers or a potato masher, mix the bread and milk until thoroughly combined. Add all remaining ingredients for meatballs. Mix until combined. Turn out on a board and divide into 8 equal pieces. Shape into large meatballs.
- Place the meatballs on the prepared baking sheet and drizzle with olive oil. Bake for 15 to 20 minutes or until golden brown.
- While the meatballs are baking, prepare the sauce. In a large pan (large enough to hold the sauce and meatballs) heat the olive oil over medium high heat. Add the onions and cook 4-5 minutes. Add the garlic and cook for one additional minute. Add the passata (or tomatoes), oregano, basil, salt, and pepper. Cook, stirring frequently, until you remove the meatballs from the oven.
