Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. Steps:

  • 1.) Heat olive oil in a large skillet and add the potatoes. Cover and cook for about 20 minutes, stirring every five minutes.
  • 2.) Sprinkle with sea salt, tarragon, a generous pinch of freshly cracked pepper, and rosemary (if you're using), stir, cover and let sit for about a minute or two to allow the flavors to be absorbed.
  • 3.) Uncover and stir the potatoes, cook them for about ten to fifteen minutes or until they're golden brown and serve hot. Eat them plain or add ketchup.

  • In large skillet over medium heat, heat 1 tablespoon oil and cook onions and bell peppers until onions are softened, about 5 minutes. Add potatoes, herbs, spices and remaining oil, cook on medium to medium low heat, uncovered, for about 25 – 30 minutes stirring occasionally. You want the potatoes to brown and crisp a little on the edges. Be sure to scrap the bottom of the skillet as well to get all the pieces that may stick to the bottom, they will add nice flavor and some crispy texture to your dish.
  • Leftovers can be stored in the refrigerator for up to 4 – 5 days, in a covered container. For longer storage, freeze for up to 2 months.

  • Pre heat oven to 425 and line a large baking sheet,( mine is 15x21 inches) or two smaller pans with parchment and set aside.
  • Add your cubed potatoes to a pot with a good pinch or two of salt and cover them with water. Bring the potatoes to a boil. Then reduce heat to med high and boil for 5-6 minutes but No longer! Drain the potatoes into a colander. Let them cool for a minute or so. Then add the potatoes back to the pot, just make sure the pot is dry.
  • Spray your parchment lined baking sheet evenly with oil. Now add your potatoes and peppers to the greased parchment and spread them in an even layer. Try not to crowd them or they won't get as crispy. Next spray the tops of them evenly with oil. Now give the pan a little shake .
