I used to love this stuff from the box mix years ago, then my grocery store stopped carrying it. I had to think fast! Came up with my own homemade version, and it's even better! (Not kidding, it really is!) And now I can have it whenever I want! ;) I don't know if this is actually healthier, but at least I can pronounce all of...

Steps:

  • 1. In large bowl that you're going to be serving this in, mix mayo, half of the packet of dressing mix, carrots, bacon bits and onion powder. (Don't add the peas yet.) Chill while making the rest.
  • 2. Cook pasta according to package direstions using the shortest time. (Or cook al dente.)
  • 3. Drain and cool. Fold pasta into mayo mixture well. Fold in peas last, carefully so that you don't smoosh them.
  • 4. Chill for several hours. Serve chilled or room temp. Garnish top with a bit more bacon bits if you'd like.
  • 5. So easy, so good, enjoy!! :D

2 c uncooked small shell pasta
4-5 baby carrots (or one large peeled carrot), shredded
1 c frozen peas, thawed
3/4 c mayonnaise, *do not sub miracle whip
1/2 pkg hidden valley ranch dressing mix (only use half of the packet)
1/4 c hormel real bacon bits, *do not sub immitation
1/2 tsp onion powder

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat. , Refrigerate until serving. Garnish with egg and paprika.

Steps:

  • Cook the pasta. Drain it well and rinse under cold running water to stop the cooking process for a minute or so.
  • Dump all of it into a big bowl and mix. Refrigerate for a day.
  • Be sure and include the oil from the marinated artichoke hearts! If it is too dry for your tastes add a few tablespoons of olive oil to loosen it up a bit.
  • This makes a lot of cold pasta salad in 20 minutes!

16 ounces rotini pasta, pasta. cooked according to package directions. (I like the spinach or wheat or red variety because it is pretty)
12 ounces marinated artichoke hearts (oil included... do not drain)
8 ounces pimientos (well drained) or 8 ounces roasted red peppers (well drained)
8 ounces of sliced black olives (well drained)
8 ounces swiss cheese (cubed into little tiny bits)
8 ounces feta cheese (you can buy this pre-crumbled and ready to go)
8 ounces green olives (well drained)
8 ounces pepperoni (you can buy it in a convenient package already sliced)
