HONEY-MUSTARD MACARONI SALAD

This is a family recipe for mac salad that was made for all holidays, cookouts, or family get-togethers. Traditional, simple, quick, and feeds a crowd. Add more mayonnaise if salad seems too dry.

Honey-Mustard Macaroni Salad image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and rinse macaroni under cold water until chilled. Transfer macaroni to a large salad bowl.
  • Toss pasta with hard-cooked eggs, onion, celery, and green bell pepper. Whisk mayonnaise, milk, pickle relish, and honey mustard in a bowl and pour dressing over the salad; mix well and season with sea salt and ground black pepper.

Honey Mustard Pasta Salad image

Steps:

  • Cook pasta in 2 quarts of salted boiling water until done to taste (for me, 8 minutes is right).
  • While pasta is cooking, add mustard, honey, vinegar, pepper, and garlic to the bottom of a serving dish.
  • Add hot drained cooked pasta, ham, and tomatoes to the dish and toss until coated by the dressing.
  • Top with cheddar cheese.

1 cup dry pasta (I like spiral)
1 cup cooked ham, diced (OR cooked chicken)
1/2 cup diced tomato
5 tablespoons honey
3 tablespoons mustard (not the bright yellow stuff)
2 tablespoons wine vinegar
1/2 teaspoon ground black pepper
1 garlic clove, minced
1/4 cup cheddar cheese

PASTA SALAD WITH HONEY DIJON VINAIGRETTE

A wonderful summer picnic salad. Delicious shell al dente pasta accented with sliced radishes, sweet green peas, olives, and moistened with a delicious Honey Dijon Vinaigrette dressing. The basil really brings the flavors alive.

Pasta Salad With Honey Dijon Vinaigrette image

Steps:

  • In a jar with a tight fitting lid, combine the dressing ingredients and shake vigorously until well combined, set aside.
  • In a large pot bring 2 quarts of salted water to a rapid boil, stir in pasta and cook for 10 minutes or until al dente.
  • Drain the pasta and rinse for 2 to 3 minutes under cool water, drain well.
  • In a large bowl combine the pasta, radishes, peas, olives, cheese and onion. Stir in the basil, drizzle with dressing and stir to combine.
  • Chill and enjoy.

Steps:

  • Boil the pasta, then cool under running water. Mix the mayo, mustard and honey in a large bowl and loosen with a little water to make a dressing the consistency of double cream. Add the pasta, chicken, onions, basil and tomatoes, season to taste, then gently mix together.
