HONEY RUBY RED GRAPEFRUITADE
For a deep-blush citrus cooler with a bubbly finish and an adult taste, add honey to red grapefruit juice and top off the mixture with a generous splash of chilled sparkling rose wine.

- Bring honey and water to a boil in a small saucepan, stirring to combine. Remove from heat, and let cool.
- Combine juice and honey syrup in a pitcher. (Or cover, and refrigerate for up to 3 days.) Add rose to pitcher. Divide juice among ice-filled glasses.

Steps:
- Juice 1 grapefruit into a bowl. Cut the peel and pith from the other grapefruit. Remove the flesh from the membranes with a sharp knife, adding any juice to the juice in the bowl. Reserve the grapefruit segments.
- Boil the reserved juice, honey and 1/4 teaspoon each salt and pepper in a small saucepan until reduced by half and slightly syrupy, 4 to 6 minutes.
- Toss the grapefruit segments with the shallots, oil, parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Bring a large, straight-sided skillet with 4 cups of well-salted water to a simmer; the water should cover the salmon. Add the salmon to the skillet and remove from the heat. Let the salmon cook in the hot water until just cooked through, 5 to 7 minutes.
- Transfer the salmon to paper towels and pat dry. Place on serving plates. Drizzle the salmon with the sauce and top with the grapefruit salad.
RUBY RED GRAPEFRUIT SALSA
From Mr. Food...he suggests serving over grilled meats or fish, or using as a dip for tortilla chips. The 4 hours cooking time is actually chilling time.

- Mix the grapefruit, bell pepper, onion, jalapeño, cilantro, and sugar together in a medium bowl.
- Combine the lime juice and olive oil (mix well) and pour over the grapefruit mixture.

- In a medium saucepan, whisk pectin into juice. Bring to a full boil over high heat.
- Add sugar and return to a rolling boil. Boil hard one minute.

- Preheat oven to 350 degrees F. Line an 8 inch square metal pan with non-stick foil or parchment.
- Combine flour, salt and powdered sugar. Cut in butter (food processor works well) until mixture is coarse and crumbly. It should be very dry.
- Press into pan and bake for 18 minutes or until golden brown around edges.
- Beat together eggs, sugar, grapefruit juice,and grapefruit zest. **Add more zest for a more "grapefruity" flavor.
- Whisk in baking powder, making sure you whisk out any lumps, then whisk in flour.
- Bake for 20-25 minutes or until set.
- Cool completely, then sprinkle top with powdered sugar. Lift from pan and cut into squares.

- Use the wedge of grapefruit to rub the rims of 6 margarita glases with grapefruit juice.
- Dip the rims in the kosher salt to coat.
- Set glasses aside.
- Place the tequila, vodka, simple syrup, grapefruit juice, lime juice and ice in a bar blender and puree until smooth.
- Divide the margarita between 6 glasses and garnish with grapefruit quarters.
