SLOW COOKER HOPPIN JOHN

Using a slow cooker makes easy work of this classic, long-simmered, delicious southern dish. Serve over cooked white rice.

Slow Cooker Hoppin John image

Steps:

  • Place black-eyed peas in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Pour 6 cups water into a pot; add ham hock. Bring to a boil, reduce heat to medium-low, and simmer until meat is tender, about 1 hour. Transfer ham hock to a plate to cool and reserve 4 cups of the cooking liquid.
  • Layer soaked peas, andouille sausage, onion, celery, and garlic in the bottom of a slow cooker. Remove meat from ham hock and add meat to slow cooker. Sprinkle bay leaves, cumin, salt, and red pepper flakes over the top. Pour reserved cooking water over peas mixture.
  • Cook on High until peas are tender, at least 4 hours.

Steps:

  • Sort and rinse peas. Soak peas in enough water to cover at least 8 hours or overnight.
  • Drain and rinse soaked peas; set aside. In 4- to 6-quart Dutch oven, heat oil over medium heat. Add onion and celery; sauté about 5 minutes or until onion is translucent. Add garlic; sauté about 2 minutes or until fragrant.
  • Add ham hock, broth, tomatoes and bay leaf. Heat to boiling. Reduce heat to simmer; stir in soaked peas. Add salt to taste. Cook 50 to 60 minutes or until peas are tender.
  • Remove and discard bay leaf. Remove ham hock. Remove ham from bone; discard bone. Shred ham; return to Dutch oven and stir. Serve over hot cooked rice.

From The Essence of Emeril....Hoppin' John is a New Year's Southern Tradition:Black-Eyed Peas for good luck, ham or ham hock for good health, and the greens for financial success! I have tried several different recipes for this and so far, this is my favorite! I sometimes add chopped spinach or collard greens even though this particular recipe doesn't call for them, and it's so delish that way too! Happy New Year!!

Emeril's Hoppin' John image

Steps:

  • Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes.
  • Add the onion, celery, green pepper, and garlic, cook for 4 minutes.
  • Add the black-eyed peas, stock, bay leaves, thyme, and seasonings.
  • Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock.
  • Adjust seasonings, and garnish with green onions.
  • Serve over rice.

Every New Years Day for about 5 years I sent this out the the Maintenance men at the Magic Kingdom at Walt Disney World, along with a big pan of cornbread, and the slow cooker always came home empty! It's good luck for New Years.

Steps:

  • In a 5 to 6 quart slow cooker put ham, carrots, onion and celery as first layer.
  • Add 3 cans blackeyed peas and collard greens as second layer.
  • Mix spices in chicken broth and pour over all.
  • Cook on low for 8 to 10 hours, depending on your slow cooker.
  • Cook rice according to directions on package and add to Hoppin' John just before serving.
  • Add more chicken broth if needed.
  • Makes 10 to 12 servings.

HOPPIN' JOHN WITH GREENS - SLOW COOKER RECIPE

This is a traditional Southern dish for bringing good luck into the New Year, consisting of black-eyed peas and rice. Eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. The peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls. Greens along with this dish are supposed to also add to the wealth since they are the color of money. Eating this the day after represents frugality and savings. You are supposed to leave 3 peas to assure that the New Year will be filled with Luck, Fortune and Romance. Serve hot with corn bread.

Steps:

  • Cover black-eyed peas with water in a large soup pot, bring to a boil, and boil for 2 minutes. Reduce heat to low and simmer peas for 1 hour. Drain.
  • Dissolve vegetable bouillon cube in 1/4 cup hot water in a small bowl; pour bouillon into slow cooker. Stir black-eyed peas, onion, garlic, ham hock, collard greens, oregano, red pepper flakes, and vegetable broth into the cooker. Add 5 cups of water or as needed to cover. Cook 5 hours on High. Stir rice into stew and cook 1 more hour.
  • Remove meat from ham hock, chop meat, and return to stew. Season with salt and black pepper.
