HOMEMADE GRANOLA
This is a great recipe for homemade granola. I make it weekly! Any dried fruit can be substituted for the raisins. I use dried cranberries in mine and it's fantastic!

- Preheat oven to 325 degrees F (165 degrees C).
- Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.
- Bake in preheated oven, stirring every 15 minutes, until golden brown and crunchy, about 1 hour; transfer to a bowl. Stir raisins and almonds through the granola.

BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

- Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
- Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

- Prep the ingredients. Preheat the oven to 350°. For stress-free granola baking, we find it’s best to practice mise-en-place (meaning “everything in place,” this is a term for prepping and organizing ingredients before you begin).
- Combine the dry ingredients (minus the sweet mix-ins) In a large bowl, stir together the oats, almonds, wheat germ, salt and seasonings. Test Kitchen tip: Don’t add the sweet mix-ins just yet.
- Heat up the liquids. In a small saucepan, combine the oil and liquid sweetener. Heat for 3-4 minutes over medium heat until well-mixed. Remove the saucepan from the heat and stir in the vanilla.
- Stir it up. Pour the warm liquid mixture over the dry ingredients. Toss and stir until evenly coated. The combination should be smelling pretty good by now.
- Bake, stirring occasionally. Spread the granola onto prepared baking sheets. (Coat the pans with cooking spray, or line with parchment paper for even easier cleanup).
- Stir in the sweet mix-ins. Don’t forget to stir in any dried fruits, chocolate or other sweet, soft mix-ins you’ve selected. When combined, store in an airtight container.
