HUNGARIAN COFFEE CAKE
This is my mom's recipe and one of my favorites for breakfast; love it warm out of the oven.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix flour, brown sugar, white sugar, butter, and salt together in a bowl until crumbly. Measure 1 cup mixture and set aside for later use.
- Stir buttermilk, eggs, and baking soda into crumbly mixture until batter is smooth. Pour batter into the prepared baking dish. Sprinkle reserved crumbly mixture over top of batter; top with cinnamon.
- Bake in the preheated oven until a toothpick inserted in the middle comes out clean, 45 to 50 minutes.

COFFEE COFFEE CAKE
Steps:
- Preheat the oven to 350 degrees F. Spray and line with parchment a 9-by-9-inch baking pan; spray the parchment as well.
- For the crumb topping: In a medium bowl, mix the flour, brown sugar, cinnamon, instant coffee powder and salt. Add the melted butter and mix until crumbs form that you can clump together in your hand. Set aside.
- For the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt and cardamom. In a smaller bowl, whisk together the coffee and sour cream until smooth.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing until each is well combined. Then add the vanilla extract and beat until the mixture is light and fluffy.
- Starting and ending with the dry ingredients, alternate adding the flour mixture and the coffee mixture to the stand mixer; mix each addition well, scraping the bowl each additions.
- Pour the batter into the prepared baking pan and top with crumb topping, spreading it evenly. Bake for 45 minutes or until a toothpick comes out clean.
- Remove the cake from the oven and allow to cool for 20 to 30 minutes before cutting and serving.
POLISH CHEESE BABKA BREAD
This is an Old recipe from Aunt Louise. I have ordered cheese Babka from Polish Bake shops. They are only available during Christmas and Easter. They are also expensive. You will love this one. Imagine Christmas morning, or any morning with this baking in the oven. Wonderful cheese filled deliciousness.

- 1. Dissolve the 2 yeast packets in the luke warm water. Do not use water over 100 degree's. Add a teaspoon of sugar to it. This helps the yeast to bind to something. It can activate in 10 minutes,or 30 minutes. Cover the bowl of yeast water with a towel. If it develops a foamy top. You know the yeast is good. If it doesn't. Discard and try again with 2 more packets.
- 2. Sift the 5 cups of flour in to a large bowl. Add the 3/4 cup of sugar,and 1/2 teaspoon of salt. Mix the ingredients together. In another bowl. Beat the egg yolks until light. Add sour cream, butter and yeast mixture. Combine well.
- 3. Add mixture to the flour mixture. Knead with hands for 10 minutes until you get a smooth dough. Put in a greased covered bowl in a warm place. Let it rise until doubled in size. Be patient! It could take a couple of hours.
- 4. Note: Shorten rising time by heating oven to 170. Shut oven off. Place covered bowl of dough in warm oven. Keep door shut.
- 5. Flour surface. Make sure to roll dough out 18- 20 inches around, or larger. More than double the width of the pan you are using . You must make sure you rolled it out enough to to fit in pan. With at least 5 inches of dough hanging over outside of pan all the way around.
- 6. make the cheese filling. Beat cream cheese. Add sugar, eggs and lemon zest. Beat until smooth.
- 7. pour the cheese filling on to the dough in pan. Lop the dough over the cheese. Bring all of the excess dough to the top. Pinch dough together over the cheese where it is exposed Do the the best you can. If Some of the cheese is not covered. No need to worry. It doesn't matter what it really looks like. Cover with towel. Let It rise again until doubled in size.
- 8. Bake for 50-60 minutes at 350 degree's . Make a tent of foil over top. This will cut down on over browning. Test with pick. cheese will be a little moist. That is fine.
- 9. Cool for 15 minutes in pan. Turn on to plate, or remove spring form. Make the icing and drizzle over the cheese ring. Add Pecans,walnuts etc. for garnishing. It is also good plain with out icing.
GUGELHUPF / KUGLOF / KUGELHOPF - GERMAN/HUNGARIAN COFFEE CAKE
However you spell it, it's a rolled coffee cake made from a raised dough that has a walnut/chocolate swirl inside. This recipe was given to me by both my Aunt (in-law) and Mother-in-law. The family always enjoy it during every holiday/family gathering and since I've been successful at making it, that job seems to have been past on to me- The tradition shall continue. Yay!

- Into a food processor, place flours, lemon rinds, 1 tablespoon of powdered sugar and butter. Process until mixture is crumbly. Set aside.
- In small bowl, warm milk to about 115°F stir in remaining tablespoon of powdered sugar and package of yeast. Let sit until bubbly (about 10 minutes).
- Separate 4 eggs - beat yolks and refrigerate whites, to save for filling.
- Add yolks to the yeast mixture.
- In large bowl place flour/butter crumbles and pour eggs/yeast over top.
- Keeping it inside the bowl, mix and knead the dough one handed (use both hands if necessary) until smooth - IMPORTANT: dough will be very gooey and sticky- DO NOT add more flour, just work the bumps out.
- Once dough is smooth - cover bowl tightly with plastic and refrigerate overnight (or at least 4 hours).
- Now work on your filling:.
- Place walnuts, powdered sugar and cocoa into food processor. Chop until walnuts are finally grounded.
- Transfer to a bowl and let sit inside refrigerator until dough is ready.
- When dough is ready: Heavily flour your work surface. (I like to spread out a large cheese cloth on my surface and flour it.).
- Remove dough from bowl and roll out into a large rectangle.
- Once that is formed, remove egg whites and whip them in a bowl until stiff peaks form.
- Fold in the grounded nut mixture.
- Spread this filling over the dough rectangle and starting at one side, roll it up like a jelly roll. (this is when it helps to have the cheese cloth under it.).
- Seal the finishing edge with a bit of water.
- Now lift it carefully and place it into a well greased and floured bundt pan. (this task can be done alone, but helps if you have someone to help you lift the roll.).
- Set pan in a cold oven to continue to rise for 2 1/2 hours or until dough is near the rim of the pan.
- Now bake at 325°F for 1 hour and 15 minutes. If during that time the top begins to get too dark before it's ready, lay a piece of foil over the top.
- Allow it cool, then turn out carefully.
- Serve plain or sprinkle with powdered sugar.
- Refrigerate uneaten portions to maintain freshness. Slices are good cold or warmed in the microwave.
- Enjoy!

HUNGARIAN GOLDEN DUMPLING COFFEE CAKE (ARANYGALUSKA)
A traditional Hungarian dessert. Many sugary balls of coffee cake dough, studded with raisins and coated with cinnamon and nuts in a syrup-like glaze on the outside. Similar to monkey bread. This recipe is not a quick one. Yeast is used in the dough, so it does take 2 1/2-3 hours for the dough to rise. This does freeze well for later use.

- Soften yeast in warm water and let stand 5-10 minutes so that it proofs.
- In a large bowl, combine shortening, 1/2 cup sugar, and salt, then immediately pour scalded milk over mixture.
- While mixture is warm, mix in 1/2 cup flour and beat until dough is smooth.
- Stir the yeast, then add it to the dough, mixing well.
- Add half of the remaining flour and beat until dough is very smooth.
- Beat in the eggs and enough of the remaining flour to make a soft dough.
- Turn dough out on lightly floured surface and let rest 5-10 minutes.
- Knead by folding opposite side over towards you, then using the heels of your hands to push the dough away, then give it a quarter turn and repeat process until smooth and elastic (5-10 minutes) (always turn the dough in the same direction and use as little additional flour as possible).
- Form dough into a large ball and place in a greased bowl.
- Turn the ball over so that the surface on the top is greased and cover bowl with waxed paper and a towel.
- Let rise in warm place (80°F) until doubled in bulk (1 1/2-2 hours).
- Punch dough down with fist, pull the edges into the center, and turn ball over inside the bowl.
- Cover bowl and let dough rise until nearly doubled again in bulk.
- Meanwhile, lightly grease the bottom of a 10-inch tubed pan.
- In a shallow dish combine 1 cup sugar, nuts, and cinnamon and set aside.
- Place melted butter in another shallow dish and set aside.
- Tear off bits of dough and form into balls 1-1 1/4-inch in diameter (about the size of walnuts).
- Roll balls first in melted butter, then lightly in the cinnamon mixture.
- Arrange a layer of balls in the bottom of the pan so that they don't touch each other.
- Sprinkle about 1/3 of the raisins over the balls and gently press into the dough.
- Continue this process until all of the dough is formed into balls and arranged in the pan and all of the raisins have been used up.
- Sprinkle any remaining butter and cinnamon mixture over the top layer.
- Cover pan with waxed paper and towel and let dough rise until light (30-45 minutes).
- Bake at 375°F until golden brown (35-40 minutes).
- Run spatula around sides of pan and invert onto a plate.
- To serve, break cake apart with 2 forks.

CREAM CHEESE-FILLED COFFEECAKE WITH FRUIT PRESERVES AND CRUMBLE TOPPING
If you understand how to vary the recipe, you only need one basic coffeecake in your repertoire. My all-purpose version consists of four components: batter, cream cheese filling, fruit preserves and crumb topping. The last three can be changed (or in some cases, omitted) to create a custom cake.

- Adjust oven rack to lower-middle position and heat oven to 375 degrees. Spray a 9-inch square metal baking pan with cooking spray. Fold a 17-inch length of heavy-duty foil to 8 1/2 inches wide and fit in the pan bottom and up 2 sides, so you can use the foil overhang as a handle to pull the baked cake from the pan.
- Topping: Use hands to thoroughly mix ingredients in a medium bowl, pressing together to form large clumps; set aside.
- Cream cheese filling: Beat cream cheese and sugar with an electric mixer until thoroughly mixed. Beat in egg and vanilla until smooth; set aside.
- Cake: Mix flour, baking powder, baking soda and salt in a medium bowl; set aside.
- Beat butter and sugar with an electric mixer set on medium-high until light and fluffy. Beat in egg until smooth. Beat in half the dry ingredients, then the remaining yogurt. Beat until ingredients are fully incorporated.
- Spread batter evenly over prepared pan. Spread cream cheese filling over batter. Dollop fruit filling (or sprinkle chocolate chips) over cream cheese filling. Finally, sprinkle evenly with crumble topping, pressing on it lightly to adhere.
- Bake until batter is fully set and topping is golden brown, about 45 minutes. Transfer pan to a wire rack to cool for 5 minutes. Run a thin-bladed knife around the sides, then use foil handles to pull cake from pan onto the wire rack. Cool to room temperature and serve. Can be covered with foil and stored at room temperature for one day.
