IMPOSSIBLY EASY BACON, EGG AND TOT BAKE (WITH MAKE-AHEAD DIRECTIONS)

Steps:
- Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In large bowl, stir Bisquick mix, milk, pepper and eggs until blended; pour into baking dish, and top with half of the bacon.
- Place frozen potato nuggets in single layer on ungreased large cookie sheet with sides. Place both the baking dish and cookie sheet in oven. Bake 20 minutes.
- Place potato nuggets evenly on top of Bisquick bake; top with cheese and remaining bacon. Bake 10 to 15 minutes longer or until knife inserted in center comes out clean. Cool 5 minutes. Top with green onion. Serve with ketchup.
- Make-Ahead Directions: Make Bisquick bake as directed through step 2. Cover and refrigerate up to 12 hours. Uncover, and continue as directed in step 3.

- In a large bowl, combine egg and soup mix. Crumble beef over mixture and mix well. Divide into 36 portions; set aside. In another large bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well. , Shape cheese mixture into 36 balls. Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Dip meatballs into eggs, then coat with crumbs. , Heat oil in a large cast-iron or other heavy skillet over medium heat. Cook meatballs until meat is no longer pink and coating is golden brown, 10-12 minutes.

- Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan.
- In large bowl, stir together all ingredients except ketchup and mustard, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
- Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with ketchup and mustard for dipping.
- Make-Ahead Directions: Make as directed through step 2. Cover and refrigerate up to 12 hours. Uncover, and bake as directed in step 3.

- 2. Divide into about 20 portions. Mine were about a 2 inch ball. Set aside.
- 3. In another bowl, combine the flour and milk until smooth. Add cheese and bacon. Mix well. Shape cheese mixture into 20 balls. Shape one beef portion around each cheese ball.
- 4. In a shallow bowl, beat eggs. Place bread crumbs in another bowl.
- 5. Dip meatballs into egg, then coat with crumbs. In a large skillet, cook meatballs in vegetable oil over medium heat for 10-12 minutes; turning often to brown on all sides.
- 6. Serve with your favorite sauces..Enjoy!

- Heat oven to 400. Spray 9 inch glass pie plate with cooking spray. In a 10 inch skillet, cook bacon over med-high heat 5-7 minutes, until crisp; drain on paper towels. Crumble bacon, set aside.
- In the same skillet, cook beef, pepper and onion over med-high heat 5-7 minutes, stirring occasionally, until beef is thoroughly cooked, drain. Stir in ketchup. Spread in pie plate, sprinkle with cheese and bacon.
