IRISH SODA BREAD

For quick and easy bread, make Ina Garten's Irish Soda Bread recipe from Barefoot Contessa on Food Network � just mix, knead and bake.

Irish Soda Bread image

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
  • Cool on a baking rack. Serve warm or at room temperature.

4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

IRISH SODA BREAD AND GUINNESS BUTTER

Crusty on the outside and tender inside, this Irish soda bread will be delicious on St. Patrick's Day. It's filled with flavor from the caraway seeds. Raisins add a pop of sweetness to the bread. Once baked, it's a dense bread but not dry. It freezes wonderfully too. We loved the Guinness butter on a piece of soda bread. Guinness has a robust flavor that's prevalent in the butter. It's sweet and savory at the same time. Enjoy for breakfast, as a snack, or alongside a bowl of hearty beef stew.

Irish Soda Bread and Guinness Butter image

Steps:

  • Preheat oven to 350F. Grease 1 9-inch round pan.
  • In the mixer bowl combine flour, caraway, raisins, cubed butter, sugar, baking powder, salt, and baking soda.
  • In a measuring cup with buttermilk, add one egg and beat. In a separate bowl, take the remaining egg and a bit of water and beat. Reserve this to brush dough with just prior to placing it in the oven.
  • With the mixer on low speed, add buttermilk and egg mixture. Mix until just blended; do not over mix.
  • Place dough on a floured surface. Add a bit more flour to top of the dough ball and knead for about 10 strokes to make a ball.
  • Place in greased pan. Baste with egg wash.
  • Cut a cross on the top with a sharp knife.
  • Bake for 1 1/2 hours. Allow to cool and wrap in plastic wrap this goes stale quickly.
  • A great addition to the final product is Guinness butter. To make, mix 2 sticks of room temp butter, 3 oz of Guinness, and 3 tablespoons honey in a mixer.
  • Served on this bread is very yummy!

Amazingly Easy Irish Soda Bread image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
  • Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
  • Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.
