Steps:

  • Combine flour, cornmeal, baking powder, salt and nutmeg in a large bowl.
  • Stir sugar and vanilla into 2 cups water. Add to dry ingredients, then knead everything together with your hands (add up to 1/4 cup more water if necessary). Cover bowl with a damp cloth and let sit 15 minutes.
  • Turn onto a floured surface and portion into 26 equal pieces.
  • Roll each piece into a sausage shape, then flatten.
  • Preheat oil to 350 degrees F in a deep-fryer. Fry dough in batches, turning once, until golden, 3 to 5 minutes.

1 3/4 pounds bread flour, plus additional for dusting
1/4 pound cornmeal
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 pound sugar
2 teaspoons vanilla extract
Oil, for deep-frying

Steps:

  • In a large bowl, stir together the flour, baking powder and salt. Rub in the butter until it is in pieces no larger than peas. Mix in water 1 tablespoon at a time just until the mixture is wet enough to form into a ball. The dough should be a firm consistency. Knead briefly.
  • Heat the oil in a large heavy skillet over medium heat until hot. Break off pieces of the dough and shape into a patty - kind of like a flat biscuit. Place just enough of the dumplings in the pan so they are not crowded. Fry on each side until golden brown, about 3 minutes per side. Remove from the pan and drain on paper towels before serving.

Steps:

  • 1. Combine the flour, cornmeal, sugar, baking powder, and salt in a large mixing bowl. Cut in the butter, using two knives. Alternatively, mix the ingredients in a food processor fitted with a chopping blade. The mixture should feel crumbly, like sand. Add enough evaporated milk to obtain a stiff but pliable dough. Stir just to mix.2. Pinch off walnut-size pieces of dough and roll them between your palms to make long thin ropes. You should have about 24, each one about 10 inches long and 1/4 inch thick. Fold the ropes in half and twist them together.3. Place the oil in a deep-fat fryer or large, deep skillet. Heat over medium-high heat until it reaches 350°F.4. Gently and carefully lower the festivals into the oil and fry, turning with a slotted spoon, until golden brown, 2 to 40 minutes in all. Transfer the festivals to paper towels to drain and serve while still hot.Makes about 24 festivals serves 4 to 6

  • In a medium saucepan, heat 1 inch of oil to 350°. Using well-oiled hands, roll tablespoon-size pieces of the dough about 3 inches long, then flatten them slightly and drop into the hot oil. If the dough sticks to your hands, just peel it off; don't worry about the shape. Fry 3 or 4 fritters at a time until golden brown, about 2 minutes per side. Using a slotted spoon, transfer the fritters to a rack set over a baking sheet to drain. Adjust the heat if necessary to maintain 350°. Serve immediately.
