HOT CREOLE SHRIMP DIP
I came across a recipe for hot crawfish dip, and it sounded delicious, but we don't have a lot of crawfish available in my area. However, I'm a big fan of shrimp, so I used that instead. This Creole shrimp dip has become a family favorite. You can increase the heat with your favorite hot sauce or add a bit of acidity with a squeeze of lemon. -Jill Burwell, Renton, Washington

Steps:
- In a Dutch oven, melt butter over medium heat. Add green onions and green pepper; cook and stir until tender, 3-4 minutes. Add shrimp, pimientos, garlic and Creole seasoning. Cook and stir until heated through. , Stir in cream cheese until melted; sprinkle with parsley. Serve with baguette slices or crackers.

HOT SHRIMP DIP
I came up with this when I wanted something to snack on that was tangy, cheesy, and had shrimp in it. Serve it on toasted crusty bread - easy and delicious!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Chop the shrimp into small pieces. In an 8x8 inch baking dish, combine shrimp, yellow onion, bell pepper, garlic, mayonnaise, vegetable oil, Old Bay ™ seasoning, black pepper, salt, and 3/4 cup of cheese. Mix well, use reserved 1/4 cup cheese to cover the top in an even layer.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.

JANICE'S SHRIMP SPREAD
My Mom Janice, made this easy shrimp spread every Christmas for as long as I can remember. While delicious as soon as it's made, I like to make it the night before to let the flavors blend. I always double this recipe because my Sister likes to take home any leftovers.

- In a large bowl, beat all ingredients except milk until well combined. Add 1-2 tblsp milk depending on the consistency you like. I only add 1 tablespoon.
- Chill overnight.
- Serve with assorted crackers.

- Preheat oven to 400˚F. Brush both sides of bread lightly with olive oil, place on a baking sheet and bake 6-8 min - toasts should be golden at the edges and slightly soft in centers. You can also toast the breads on a large skillet.
- Heat a large oven-safe skillet or cast iron pan over med/high heat. Add 1 Tbsp butter to the hot skillet then add shrimp in a single layer and season lightly with salt and pepper. Saute 2 min per side or just until cooked through. Transfer to cutting board to cool slightly then chop into pea-sized pieces.
