POPPY SEED BREAD II
A very good poppy seed bread. The glaze makes it special.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans.
- Mix the flour, salt, baking powder, eggs, milk, vegetable oil, white sugar, poppy seeds, 1 1/2 teaspoons of the vanilla, lemon and butter flavoring. Stir until just combined and pour the batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 1 hour. Cool for 5 minutes then poke holes in the top of the bread with a meat fork and pour glaze over tops.
- To Make Glaze: Mix the orange juice, confectioner's sugar, and the remaining 1/2 teaspoon each of the vanilla, butter and lemon flavorings. Use immediately to pour over the still warm loaves.

- In a large bowl, combine first five ingredients. Add the eggs, milk, oil and extracts. Pour into two greased 8x4-in. loaf pans. Bake at 350° for 60-65 minutes. Cool completely in pans. , In a saucepan, bring glaze ingredients to a boil. Pour over bread in pans. Cool for 5 minutes before removing from pans to wire racks to cool completely.

MY MOM'S POPPY SEED BREAD
This recipe was given to me by my friend, Tracy Wernsman. It is very yummy and I know holds a special place in her heart. Enjoy!

Steps:
- Blend dry ingredients with milk and oil, beat eggs in thoroughly and add flavorings.
- Pour into 2 greased bread loaf pans. Make sure pans are greased to prevent sticking or even better, use a non-stick pan.
- Bake at 350 degrees for 1 hour and 15 minutes.
- Test with toothpick.
- Meanwhile, melt butter, add juice, sugar, vanilla and almond extract.
- Bring to a boil.
- Remain warm.
- When bread is done, drag a knife around edges of your pan, poke holes with a fork in random pattern.
- Drizzle glaze over and in cake.
- Cool thoroughly.
- Wrap in Saran Wrap.
- Refrigerate or freeze.
- Could also make muffins or smaller loaves.
JESSE CATES POPPY SEED BREAD
I found this in the newspaper many years ago; it is supposed to be the bread they serve at Jesse Cates restaurant. It has been so long since I've had the original, I can't say how close it is, but I can say my family loves it! For a really decadent treat spread a warm slice with honey butter -- yum!

- Combine dry ingredients and poppy seeds in large bowl, blending well.
- Mix oil, milk, vanilla and eggs in separate bowl.
- Add dry ingredients to liquid ingredients. Mix at medium speed until smooth, about 4 minutes, scraping the bowl often.
- Pour into 2 8x4 inch greased pans, or a 9x11 inch cake pan.
- Bake at 325 degrees for 1 hour 25 minutes, or until test done with a toothpick and is golden. (I usually bake them for closer to an hour, so keep an eye on them.).

- Dissolve yeast and sugar in water. Combine milk, shortening and salt; stir into yeast mixture. Add enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 3 minutes. Place in a greased bowl, turning once to grease top. - In small bowl or measuring cup combine sugar and 1/2 cup warm water. Sprinkle with yeast. let stand for 10 minutes or until yeast bubbles up and doubles in volume.
- Meanwhile in a separate bowl combine remaining 2 cups warm water, molasses and oil.
- In large bowl combine wholewheat flour, rolled oats, rye flour, bran, wheat germ, sunflower seeds, sesame seeds, poppy seeds, flax seeds and salt.
- When yeast has risen, stir it into water/molasses mixture. Stir wet ingredients into flour mixture. Batter should be loose.
- Turn batter into one 10 x 6 inch (3 litres) or two 8 x 4 inch (1.5 litre) loaf pans that have been buttered and lined with parchment paper. Press extra seeds into top. Cover loosely with plastic wrap and let rise in a warm place for about 1 hour or until batter has risen to top of pan.
- Bake in a preheated 350 F oven for 1 hour for large loaf or 45 minutes for smaller ones.

- Cut loaf of French bread into 10 slices, 3/4 of the way through.
- Insert slices of Swiss Cheese between each of the bread slices.
- Saute onion in butter until transparent, not brown.
- Add poppy seed to butter.

- Wrap in foil.

- Preheat oven to 350 F degrees.
- Grease and flour two regular size loaf pans.
- Combine flour, baking soda, and salt in a large bowl and whisk together.
- In another bowl, combine sugar, eggs, and oil.
- Add the flour mixture alternately with the milk into the egg mixture, mixing between each addition by hand.
- Stir in poppyseeds (yes, it really is 1 1/2 Tbsp) and flavorings.
- Pour into prepared loaf pans and bake at 350 F for 1 hour, or until cake tests done (you may need another 15 minutes baking time).
- When baked, set the loaf pans on a rack (leaving loaves in pans).
- Combine glaze ingredients and pour all over the still warm loaves (if you like, poke holes in the surface with a skewer before pouring glaze so that it leaks into the bread).
- The center of the bread will be very, very moist- almost wet from the glaze.
SWEET POPPY SEED BREAD
This is a sweet bread, different from the popular lemon poppy seed flavor. Very simple to make and very moist and tasty! Can also be made into muffins.
