THE BEST MASHED POTATOES

This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

The Best Mashed Potatoes image

Steps:

  • Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
  • Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

2 pounds russet potatoes, peeled and quartered
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 400ºF.
  • Cut top 1/4-inch garlic head and wrap head in foil.
  • Roast garlic 40 to 50 minutes, or until very soft, and cool.
  • Squeeze roasted garlic from head and reserve.
  • 3In a 4-quart saucepan cover potatoes (unpeeled) with water by 2-inches and simmer until very tender, about 30 minutes.
  • Drain potatoes in a colander (do not peel).
  • Transfer potatoes while still hot to a large bowl and add butter.
  • With an electric mixer on low speed mash slightly.
  • Beat in sour cream, buttermilk, chives, and oil until combined well.
  • Add Parmesan, reserved garlic, pepper, and salt to taste, beating until smooth.

Sloppy Joe Baked Potatoes image

Steps:

  • Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes. Set aside.
  • Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, the chili powder and garlic powder; continue cooking until the meat is cooked through, 3 to 5 more minutes.
  • Split the baked potatoes open lengthwise, dot with the remaining 1 tablespoon butter and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with the cheese while still hot.

Furthermore, I enjoy posting Trader Joe recipes especially for folks who don't have a store in their city or those living abroad. Vegan-friendly merely by replacing the chicken broth with vegetable broth. The chives are optional.

Steps:

  • Heat the potatoes and broth to a boil in a large pot.
  • Cover and cook over medium heat 15 minutes or until the potatoes are tender.
  • Drain and *reserve* cooking liquid.
  • Mash potatoes with 1/2 cup reserved cooking liquid/broth. Add more liquid if necessary for desired consistency.
  • Stir in chives or other herb of choice.
  • Season with white pepper.
  • Tip: save the remaining cooking liquid for another recipe.

Momma's Mashed Potatoes image

Steps:

  • Place potatoes and lemon juice in a large saucepan, and add enough water to cover. Bring to a boil over medium-high heat, and cook until tender, about 15 minutes.
  • Drain water from potatoes, and use a potato masher to mash. Stir in egg white and butter, and gradually mix in the half-and-half using the masher. Use more or less cream to reach your desired consistency. Season with salt and pepper to taste.
