CHOCOLATE-CHOCOLATE CHIP COOKIES WITH COCONUT

Stir bittersweet chocolate chips and shredded coconut into a chocolate dough for a killer cookie.

Chocolate-Chocolate Chip Cookies with Coconut image

Steps:

  • Line 2 baking sheets with parchment paper.
  • Beat the butter, brown sugar and granulated sugar with an electric mixer in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, cocoa powder, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chips and coconut.
  • Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.
  • Meanwhile, position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.
  • Bake until the cookies are set and golden on the bottom, 12 to 15 minutes. Let cool on the baking sheets for 10 minutes, then transfer to racks to cool completely.

1 stick (8 tablespoons) unsalted butter, at room temperature

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Sift together the all-purpose flour, cake flour, baking powder and baking soda; set aside.
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs and vanilla, until well blended. Gradually stir in the flour mixture. Stir in the chocolate chips by hand using a wooden spoon, stir in walnuts if desired. Drop cookies by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake for 10 to 14 minutes in the preheated oven, until the edges are light brown. Let cookies cool on the baking sheet before removing to wire racks to cool completely.

Steps:

  • 1. Preheat oven to 375ºF. Cover cookie sheet with aluminum foil, and spray with non-stick cooking spray.
  • 2. Combine shortening, brown sugar, milk and vanilla in large bowl. Beat with electric mixer on medium speed until well mixed. Beat in egg and continue to beat until mixture is creamed.
  • 3. Combine flour, salt and baking soda in a separate, large bowl. Mix into shortening mixture until just blended. Stir in coconut and chocolate chips.
  • 4. Drop by large tablespoonfuls onto cookie sheet, and bake 9-10 minutes, or until golden brown around the edges.
  • 5. Cool 5 minutes on baking sheet on a cooling rack. Remove to rack to cool completely.
