This no-bake skillet lasagna is made right on your stovetop and is a fast and easy alternative to store-bought hamburger mixes!

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add spaghetti sauce, tomatoes, onion, garlic, basil, oregano, salt, and pepper. Cook over low heat until sauce is hot, about 15 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook mafalda noodles at a boil until tender yet firm to the bite, about 8 minutes. Drain.
- Add cooked and drained noodles to the sauce and stir until completely coated. Sprinkle mozzarella cheese on top.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place skillet under the hot broil and cook until cheese is golden and bubbly, 3 to 5 minutes.

- In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes and spaghetti sauce; heat through. Transfer to a large bowl., In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning., Return 1 cup meat sauce to the skillet; spread evenly. Layer with 1 cup cottage cheese mixture, 1-1/2 cups meat sauce and half the noodles, breaking to fit. Repeat layers of cottage cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Reduce heat; cover and simmer for 15-17 minutes or until noodles are tender., Remove from the heat. Sprinkle with shredded cheeses; cover and let stand for 2 minutes or until melted.

KAREN'S LASAGNA
A lasagna fashioned after my own recipe #139956. As with that recipe, I usually just dump everything in the pot without measuring it, but decided that if I wanted to post it, I had better measure so that others can at least have a starting point. Tweek it to your own tastes by adding either spicy or sweet Italian sausage. I like the bite of spicy. The spices listed here are approximate. Taste often and add more as needed. Just remember, that although you can add spices all day long, you can never remove them once they are in the sauce so add a little at a time, simmer a short time, taste and add more if desired. Make the recipe your own in the comfort of your kitchen by taking liberties with it. I won't mind in the least. It is what I would do if this recipe was posted by you.

Steps:
- Combine ground beef, Italian sausage (bulk or casings removed and crumbled), onions and garlic in a large dutch oven or large pot; saute until veggies are tender and meat is browned; drain any fat left in the pan.
- Add the tomato sauce, diced tomatoes, and tomato paste to the meat mixture.
- Stir in the wine, diced bell pepper, bay leaf, basil, oregano and brown sugar.
- Bring to a boil, stirring occasionally; turn heat down to a simmer and cover.
- Simmer 3 to 5 hours, stirring occasionally.
- Taste often and add more spices to taste if needed, simmering after each addition before tasting again.
- Add the spinach, sliced mushrooms and red pepper flakes 1 hour before serving if desired.
- In the meantime, cook lasagna noodles according to the package instructions.
- Layer in this order in your lasagna pan: a thin layer of meat sauce, a layer of noodles, another thicker layer of meat sauce, a cup of cottage cheese, sprinkle on a thin layer of mozzarella, dust with 1/3 of the Parmesan cheese and begin the next layer starting with the noodles; repeat until all sauce, noodles, and cheeses are used ending with noodles, an even layer of mozzarella cheese, dusted with Parmesan.
- Bake in a 350 degree Fahrenheit oven until cheese is melted and spotted with browned areas, about 30 to 45 minutes.
- Allow lasagna to set for 10 to 15 minutes before cutting.

- Skillet Pizza Lasagna: Substitute 2 15 oz cans of pizza sauce for pasta sauce and add 1/2 cup diced pepperoni.
- Cook meat, pepper, onion and garlic over med heat for 10 minutes, stirring occasionally until meat is brown.
- Drain.
- Stir in remaining ingredients except for the cottage cheese.

- In a Dutch oven, brown beef, onion and pepper; drain if necessary. Stir in spaghetti sauce, oregano and basil. Simmer, uncovered, for 10-15 minutes. , In a 10-in. cast-iron or other heavy skillet, spread 1/4 cup of the meat sauce. Top with 3 noodles, cutting to fit as needed. BEST ONE-SKILLET LASAGNA
I came across this recipe in the most serendipitous manner...on my way to work going 50mph I saw some trash blowing across the road...it got stuck to my car and I could hear it fluttering all the way to work. When I got out of my car I found a piece of newspaper stuck to my front grill. I took it off and what was it? A torn out page from a week old newspaper that has 4 yummy sounding recipes! Wow. - Cook meat in a 12-inch nonstick skillet over high heat, breaking it into pieces with a wooden spoon until fat renders, 3-5 minutes. Drain.
- In the skillet stir into the meat, garlic, red pepper flakes and 1/2 tsp salt and cook over medium-high heat until fragrant, about 30 seconds.
- Sprinkle broken noodles into skillet, then pour in tomato sauce and water so that it covers the noodles (you may need to add extra water if noodles are especially dry).
- Cover and cook, stirring often at a vigorous simmer until noodles are tender, about 20 minutes.
- Turn off heat, stir in half of the mozzarella and half of the parmesan. Season with salt and pepper to taste.
- Dot heaping tablespoons of ricotta over the noodles, then sprinkle the remaining cheeses.
- Cover and let stand off heat until cheeses melts, 3-5 minutes.
- Sprinkle with basil before serving.

SKILLET LASAGNA
I would have posted a photo, but there wasn't much left. I found this recipe in America's Test Kitchen 2006, and it's fantastic. I used cottage cheese instead of ricotta, but whatever you have on hand or prefer. I didn't use a nonstick skillet, and I found a 12" skillet wasn't large enough. I wound up cooking this in an actual skillet (the kind you plug in) by the time I got all the ingredients in the pan because there wasn't room to stir anything.

- Pour the tomatoes with their juices into a 1-quart liquid measuring cup.
- Add water until the mixture measures 1 quart.
- Heat the oil in a large nonstick skillet over medium heat until shimmering.
- Add the onion, red bell pepper, and 1/2 teaspoon salt and cook until the onion begins to brown, about 5 minutes.
- Stir in the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
- Add the ground meat and cook, breaking apart the meat, until no longer pink, about 4 minutes.
- Scatter the pasta broken into 2" lengths over the meat but do not stir.
- Pour the diced tomatoes with their juices and tomato sauce over the pasta.
- Cover and bring to a simmer.
- Reduce the heat to a medium-low and simmer, stirring occasionally, until the pasta is tender, about 20 minutes.
- Remove the skillet from the heat and stir in 1/2 cup parmesan.
- Season with salt and pepper.
- Dot with heaping tablespoons of the ricotta, cover, and let stand off the heat for 5 minutes.
- Sprinkle with the basil and the remaining 2 tablespoons parmesan and serve.
