THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the ketchup, water, brown sugar, vinegar, salt, mustard, chili powder and allspice. - In a skillet, over medium heat, sautee onion until slightly translucent. Use cooking spray if desired.
- Add ground beef or turkey, add salt and pepper.
- Cook until no longer pink.
- In the mean time: In your 2 cup measuring vessel, combine ketchup, vinegar, mustard, brown sugar. Stir into meat once it is fully cooked.
- Simmer 15-20 minutes. Serve hot on soft rolls or buns.
- Note: you may use 3/4 cup ketchup and 1/4 cup of your favorite BBQ sauce for added zing.

This is the perfect sloppy joe for little hands but with a flavor both kids and adults will love. For little kids: Let them measure out the vegetables. For big kids: Help them stir the meat and assemble the sliders.

- Heat the oil in a large nonstick skillet over medium-high heat. Add the ground beef, and cook, stirring frequently, until the beef begins to brown, about 4 minutes. Stir in the chili powder and 1 teaspoon salt, and continue cooking until the meat is cooked through, 2 minutes more. Drain off any excess liquid, and add back 2 tablespoons of it. Reduce the heat to low, stir in the ketchup, sugar, vinegar and 1/2 cup water and simmer, stirring occasionally, until the sauce is slightly thickened, about 8 minutes. Stir in the carrots and corn, and cook, partially covered, until the vegetables are tender and heated through, 5 minutes.
- Scoop some sauce onto 1 half of each slider bun, top with a handful of shredded cabbage and a pickle chip and serve.
NEAT SLOPPY JOES
No green pepper in this recipe, so it's a hit with kids. We added this to the menu at a children's camp, and it has been a favorite for several years. The mixture is thick, so they are 'neat' rather than sloppy. This freezes and reheats well.

- Place ground beef in a large skillet over medium heat. Cook until evenly browned, stirring to crumble. I like to use a potato masher to even out the lumps. Add onion and celery, cover the pan, and cook until tender and transparent, about 5 minutes. Drain off any grease.
- Stir the tomato soup (undiluted), ketchup, vinegar, brown sugar and Worcestershire sauce into the beef mixture. Season with salt and garlic powder. Heat to a simmer over low heat, and cook until thoroughly heated, stirring frequently to prevent it from burning on the bottom.
