Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

BONNIE'S KILLER MEATLOAF

This is a delicious, moist and flavorful meatloaf, definitely company worthy, and it is our very favorite meatloaf recipe. Sandwiches made the next day are just awesome! My friend, Pattycake, shared this recipe with me, and now I am happy to share it with my JAP friends. Enjoy! Photos are my own.

Steps:

  • 1. In a large mixing bowl, combine eggs, tomato paste, kitchen bouquet.
  • 2. Add all the seasonings and spices.
  • 3. Stir in peppers, onions and celery.
  • 4. Add the ground meat and sage sausage. Mix well. Best mixed with your hands.
  • 5. Stir in the croutons and mix well.
  • 6. Form the loaf and place in a meatloaf pan.
  • 7. "Frost" the top of the meatloaf with the leftover tomato paste as depicted in the photo.
  • 8. Tent the meatloaf loosely. Bake meatloaf in a 350 degree, pre-heated oven for 1 1/2 hours or until it reaches an internal temperature of 175 degrees. (I use a meat thermometer.) Remove tin foil the last 15 minutes. Let meatloaf stand covered loosely for 15 minutes. Spritz with a couple of sprays of butter flavored kitchen spray to give it a glossy appearance, and this is how it looks.
  • 9. Place the meatloaf on a platter and slice it to serve. You can serve it without gravy because it is so moist. That is the way I like it. The guys, of course, have to have their gravy! Enjoy!

1 pound lean ground beef
1 pound jimmy dean sage sausage
2 eggs beaten
1/4 cup tomato paste (use rest on top of meatloaf
2 teaspoons kitchen bouquet
1 1/4 teaspoon seasoned salt
1/2 teaspoon black pepper
a few sprinkles garlic powder
a few sprinkles onion powder
1 teaspoon thyme leaf crushed
1/2 red bell pepper chopped fine
1/2 cup celery chopped fine
1/2 cup onions chopped fine
1 1/2 cups freshly toasted plain croutons from french bread, cooled.
spritz of butter spray for top of cooked meatloaf

DADDY'S KILLER MEATLOAF

This is my dad's recipe and it is the best meatloaf, and anyone who has tried it has said as much. Ladies where I used to work even paid him to make this for them. Quite the boost to my widowed father! We dig ramps here in the Smoky Mountains in the spring and I have substituted the onion with ramps. My stepson says he does not...

KILLER HUNGARIAN MEATLOAF

First the name is a goof. This meatloaf has nothing to do with my being Hungarian except that I am so it's an appropriate title. This is an adaption of another recipe I found elsewhere (heavily changed too I add). I happen to think it's killer. Hope you do too.

  • Optional: If you decide to add hard-boiled eggs to the meatloaf, place the eggs in a sauce pot, add enough water to cover the eggs. Bring to a boil, remove from heat, and allow them to sit for 10 minutes. Remove the hot water and rinse with cold water. Peel shells and add to the center of the meatloaf by laying half of the meat to the baking dish, line up the eggs, and add the remaining meat mixture creating the shape of a meatloaf.
  • Preheat oven to 350°F. In a large bowl, combine and mix together ground beef, ground pork, onion, garlic, egg, bread crumbs, parsley, salt and black pepper.
  • Spread the vegetable oil in a baking pan/dish, or a large loaf pan. Add the meat mixture and begin shaping it into a loaf. Just to point out, if you place it in a baking pan/dish, the loaf will tend to relax, however in a large loaf pan, it will hold it's shape.
  • Cook the meatloaf for about 60 minutes. Remove the lid about 15-20 minutes before it's done to get a nice crispy coating on top of the meatloaf. Remove from the oven when cooked and return the lid and allow it to sit for a few minutes before cutting.
