THE BEST BANANA BREAD
We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

Steps:
- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

BANANA BREAD
Here is an easy way to use up the bananas on the countertop, or brown ones thrown in the back of the freezer. Don't overmix the ingredients, and make sure the bananas are very ripe.

- Heat oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan. Using electric mixer, cream butter until smooth and fluffy. Add sugar and cream together 2 minutes more. One at a time, mix in eggs. Mix in bananas until only small lumps remain.
- Stir dry ingredients together and mix into banana mixture just until combined. Pour into prepared pan. If making topping, stir ingredients together and sprinkle over batter.
- Bake about 55 to 65 minutes, until a toothpick inserted into center comes out clean. Let cool in pan 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage.

KIM'S BANANA BREAD
my family loves this bread especially my son, Conner. It's so easy and yummy! Just be patient with the baking time-it takes a little longer at a lower oven temp.

- 1. Pre-heat oven to 325 degrees. mash bananas in a med bowl. add eggs, veg oil, vanilla, and milk. stir until well blended. stir in sugar. in a small dish, add baking soda to flour and mix well. add flour mixture to the wet mixture and stir until well blended. add nuts if you desire and pour into a loaf pan sprayed with oil and bake for about 1 hr 15 in...keep an eye on it-everyone's oven is different-to check to see if it is done-stick a knife in the middle of the bread and if it comes out clean it is ready. enjoy!
- 2. if you want to get a little creative-try adding 1/2 cup coconut or 1/2 bag of chocolate chips...yum!

- Preheat oven to 350ºF. Spray a 8 1/2 x 4 1/2-inch or 9×5 loaf pan with nonstick cooking spray or line with parchment paper. Using an electric mixer, combine butter and sugars. Add in mashed banana, eggs, and vanilla extract. Mix until combined. Sift in flour, baking soda, baking powder, cinnamon, and sea salt. Mix until incorporated, but don’t over mix.
- Toss 3/4 cup of the chocolate chips with 1 tablespoon flour. Fold the chocolate chips into the batter.
- Pour mixture into loaf pan. Top with extra 1/4 cup chocolate chips for presentation. After 35 minutes, I suggest lightly covering bread with foil, to avoid the top from getting too brown. Bake for a total of 55 to 60 minutes. Let cool in pan for at least 10 minutes. Use a butter knife to loosen around the edges and carefully remove the bread from the pan. Cool completely on a cooling rack before slicing. Enjoy!
