KING ARTHUR FLOUR'S OLD FASHION OATMEAL BREAD

I woke up at 4:30,couldn't get back to sleep,so I decided to bake bread while it was cool. It was easy to make and delicious. It made great toast and I'll use it for sandwiches as well. This is a King Arthur flour recipe with a few changes.I only had 2 T. of molasses,so I used 2 T. & added 2 T of honey to complete the recipe.No dry milk,so I used 1/4 c whole milk and 1/4 c less water. I did not use the bread improver and the bread rose just fine. The kitchen was cool,so I turned the oven to 250 degrees.When it came to temp,I turned it off and put the bread in to rise.

King Arthur Flour's Old Fashion Oatmeal Bread image

Steps:

  • 1) Combine the boiling water, oats, oil, and molasses in a large bowl, or in the bucket of your bread machine set on the dough cycle. Stir, and allow to cool until barely warm, about 15 to 20 minutes. 2) Add the remaining ingredients and mix and knead them - by hand, mixer, or bread machine - to form a soft, slightly sticky, craggy dough. 3) Cover the bowl, and allow the dough to rise until it's puffy though not necessarily doubled in bulk, about 1 1/2 hours. If you're using a bread machine, allow the machine to complete its dough cycle. 4) Turn the dough out onto a lightly greased or floured work surface. Shape it into a log, and place it in a well-greased 8 1/2" x 4 1/2" loaf pan. Cover the pan with plastic wrap and allow the bread to rise for 45 to 60 minutes. When fully risen, the crown of the bread should be about 1" above the rim of the pan. 5) Remove the plastic, and bake the loaf for about 35 minutes in a pre-heated 350°F. A digital thermometer will register at least 190°F when inserted into the center. This bread can brown quickly, so check during the baking time and tent it lightly with foil if needed. 6) Remove the loaf from the oven, turn it out of the pan, and cool it on its side on a rack. The bread is delicate coming out of the oven, and setting it upright on the rack may cause it to sag. 7) Allow the bread to cool completely before slicing

- 1/4 c vegetable oil

- 2 3/4 c king arthur unbleached all-purpose flour

- 1/4 c baker's special dry milk or nonfat dry milk
- 1 t.king arthur whole-grain bread improver,optional

Steps:

  • In a large mixing bowl, or in the bowl of an electric mixer, combine all of the ingredients, mixing to form a shaggy dough. Knead dough, by hand (10 minutes) or by machine (5 minutes) till it's smooth.
  • Place dough in a lightly greased bowl, cover and allow it to rest for 1 hour; it'll become quite puffy, though it may not double in bulk. Shape as directed below.
  • Bread machine method: Place all of the ingredients (except the fruit) into the pan of your machine, program machine for manual or dough, and press Start. About 10 minutes before the end of the second kneading cycle, check dough and adjust its consistency as necessary with additional flour or water; finished dough should be soft and supple. Add the raisins or currants about 3 minutes before the end of the final kneading cycle. Shape as directed below.
  • Shaping: Transfer the dough to a lightly oiled surface, and shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan, cover the pan (with an acrylic proof cover, or with lightly greased plastic wrap), and allow the dough to rise for 1 to 1 1/2 hours, till it's crested 1" to 2" over the rim of the pan.
  • Baking: Bake the bread in a preheated 350°F oven for 35 to 40 minutes, until an instant-read thermometer inserted into the center registers 190°F. If the bread appears to be browning too quickly, tent it with aluminum foil for the final 10 minutes of baking.
  • Yields 1 loaf. I personally use my bread machine to process the dough and bake in a well greased loaf pan.I have never tried it with raisins,but I bet it would be great.

OLD-FASHIONED OATMEAL COOKIES (KING ARTHUR FLOUR)

This big, dark brown, lusty rounds bear little resemblance to the light tan, chunky-looking cookies anyone would immediately identify as oatmeal. Grinding the oats makes these cookies smoother in appearance; grinding the raisins also evens out their texture and adds wonderful moistness and flavor. And molasses lends that old-fashioned taste.

Old-Fashioned Oatmeal Cookies (King Arthur Flour) image

Steps:

  • Preheat the oven to 325. Line cookie sheets with parchment.
  • In a large bowl, cream together the butter, shortening, brown sugar, molasses, egg and vanilla. Beat until light-colored and smooth.
  • In a food processor or blender, process the oats, flour, raisins, salt and baking powder for about 30 seconds, or until both the oats and raisins are chopped, yet still in recognizable pieces.
  • Beat the oat mixture into the butter mixture until smooth.
  • Using a 1/4 cup measure or large cookie scoop, drop the dough on the cookie sheets, leaving 3 inches between cookies.
  • Moisten your fingers and gently flatten each cookie to a 2 1/2 inch round or 1/2 inch thick.
  • Bake the cookies for 18 minutes or until they're a medium golden brown.
  • Remove them from the oven and let rest on the cookie sheet for 1 minute, then transfer to a rack to cool completely.
  • The cookies will be soft and delicate when they come out of the oven, but will get firmer as they cool.
