AIR-FRYER PEPPERMINT LAVA CAKES
It never ceases to amaze to see warm chocolate pudding ooze out of the center of this tender chocolate cake. These cakes are a showstopper on a plate! Serve lava cakes with whipped cream or ice cream. -Carolyn Crotser, Colorado Springs, Colorado

Steps:
- Preheat air fryer to 375°. In a microwave-safe bowl, melt chocolate chips and butter for 30 seconds; stir until smooth. Whisk in confectioners' sugar, eggs, egg yolks and extract until blended. Fold in flour., Generously grease and flour four 4-oz. ramekins; pour batter into ramekins. Do not overfill. Place ramekins on tray in air-fryer basket; cook until a thermometer reads 160° and edges of cakes are set, 10-12 minutes. Do not overcook., Remove from basket; let stand 5 minutes. Carefully run a knife around sides of ramekins several times to loosen cake; invert onto dessert plates. Sprinkle with crushed candies. Serve immediately.

This comes from a book on dinosaurs that my son borrowed from the library. Very simple to make and the kids can help, too.

Steps:
- Combine all ingredients except for jam in a bowl. Mix well.
- Place mixture between 2 sheets of waxed paper and roll out to 1/8 - 1/4 inch thickness.
- Cut out 24 circles with 3-inch round cookie or biscuit cutter, rerolling scraps as necessary.
- Place 12 circles into a muffin tin, pressing down slightly to form a cup.
- Drop 1 tablespoon jam into each cup.
- Place remaining 12 circles on top of jam and press down edges gently to seal.
- Poke a hole in the top of each cup with a toothpick.
- Bake at 400 F for 15 minutes or until golden brown.
- Remove from muffin tin and sprinkle with powdered sugar, if desired.
- **NOTE** Let cool before serving. Filling will be very hot!

LAVA FLOW
Steps:
- Blend rum, pineapple juice, and pina colada mix with 1 cup of ice. Next, take a glass and coat the inside with strawberry puree. Pour in colada blend. Finally, use a spoon to drag the strawberry puree up through the colada drink, creating a pink stripe. Garnish with a pineapple chunk, and serve.
LAVA FLOW
A fun authentic Hawaiian drink that tastes REALLY good. As you pour in the second mixture, the first will slowly creep up the sides of the glass like lava.

- Place strawberries, light rum, and dark rum into a blender. Puree until smooth and pour into a tall glass. Rinse out blender, then puree banana, pineapple juice, and cream of coconut until smooth. Slowly pour the banana mixture into the strawberry mixture and watch the lava rise!

- Preheat Oven to 350˚F. In a small saucepan, combine syrup ingredients: 1/2 cup sugar, 1 Tbsp lemon juice, 1/3 cup water and 1/4 cup honey. Bring to a boil over med/high heat, stirring until sugar dissolves then reduce heat and keep at a light boil for 4 min without stirring. Remove syrup from heat and let cool at room temperature while prepping baklava cups.
- In a food processor, pulse together 2 cups nuts to coarsely chop. Transfer to medium mixing bowl and stir in 1/2 tsp cinnamon. Add 3 Tbsp melted butter and stir to combine.
- Arrange 30 mini phyllo cups on rimmed baking sheet and divide nut mixture between the cups (about 2 tsp per cup), patting down the tops with your fingers. Bake 10 min at 350˚F.
- Once out of the oven, immediately spoon cooled syrup over nuts, adding 1 tsp to each one to let the syrup soak in then repeat with another 1/2 teaspoon of syrup until all syrup is used up. Let rest at room temperature for 6 hrs or overnight for flavors to meld and cups to soften. Serve as is or drizzled with chocolate.
