- Brown ground beef, green pepper, and garlic cloves in Dutch oven or stock pot; drain.
- Add onion, diced tomatoes, and tomato sauce.
- Stir in chicken broth, brown sugar, Italian seasoning, salt, and thyme.
- Bring to a boil; add lasagna noodles.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Stir in Parmesan cheese.
- Garnish each bowl with Mozzarella cheese.

- Heat large Dutch oven over medium high heat.
- Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and saute for 30 seconds.
- Drain off any excess fat.
- Add sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices, and lasagna noodles.
- Bring to a boil and then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20 to 30 minutes).
- Discard bay leaf and stir in heavy cream and 2 to 4 cups chicken broth to reach desired consistency. Garnish individual servings with desired amount of cheese.

- 1. First mix together the can of tomatoes, and tomato paste in crockpot.
- 2. Next add broth, beef, garlic, parsley, basil, onion, V8 and salt/pepper.
- 3. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
- 4. When 30 minutes are left of cook time, add in the 1 cup of water and noodles. Stir to combine. Put lid back on and continue cooking for 30 minutes.

My husband raved about this soup after tasting it at a local deli. This is my version, which he says is very close. It is thick and satisfying, and alot easier to prepare than lasagna!

- Cook beef and onion in a large pot.
- Add hamburger helper seasoning mix (NOT THE NOODLES YET).
- Add water, corn, tomatoes and cheese. Bring to a boil.
- Reduce heat, cover and simmer for 10 minutes, stirring occasionally.
- Put in noodles, zucchini and frozen spinach.
- Simmer for another 10 minutes of until the noodles are cooked.

- Cook, beef, onion and garlic in dutch oven over medium heat until beef is browned and onion is tender.
- Drain.
- Stir in water, diced tomatoes and tomato paste until blended.
- Stir in remaining ingredients except croutons and cheese.
- Heat to boiling then reduce heat.
- Cover and simmer about 10 minutes until pasta is tender.
- Set oven to broil.
- Pour hot soup into 6 oven-proof soup bowls or casseroles.
- Top each with 1/4 cup croutons.
- Sprinkle with cheese.
- Broil soup with tops 3 to 4 inches from heat 1-2 minutes or until cheese is melted.

- Cook meat in a large skillet over medium-high heat until brown, stirring occasionally with a wooden spoon and breaking up the meat. Remove skillet from heat. Place colander over bowl. Spoon meat into colander and let fat drain into bowl. Return meat to skillet. Discard fat.
- Spoon 1 cup of the spaghetti sauce in the bottom of a 2-quart rectangular baking dish. Stir remaining spaghetti sauce into meat in skillet. Cook over medium heat until hot, stirring occasionally with a wooden spoon. Remove meat mixture from heat.
- Place 2 uncooked noodles on sauce in bottom of dish. Spread one-third of the meat mixture on top of noodles. Spread 3/4 cup of the cottage cheese over meat. Sprinkle 1/2 cup of the mozzarella cheese over cottage cheese. Add another layer of 2 uncooked noodles, one-third of the meat mixture, the rest of the cottage cheese, and 1/2 cup of the mozzarella cheese. Layer remaining uncooked noodles, meat mixture, and mozzarella cheese. Finally, sprinkle Parmesan cheese over top, if you like.
- Cover baking dish with foil. Bake in a 350 degree F oven for 1 hour. Remove from oven and let stand on a cooling rack with foil cover in place for 15 minutes. Carefully remove foil from dish so steam escapes away from you. Makes 6 servings.
