Lidia's Almond-Apricot Butter Cookies Recipe - (4.2/5) image

Steps:

  • Whisk together flour and salt in a bowl. Beat butter and sugar in separate bowl with an electric mixer until very pale and fluffy, about 4 minutes, then beat in egg and both extracts. At low speed, beat in flour mixture just until a dough forms. Wrap dough in plastic and chill until firm, about 1 hour. Preheat oven to 350°F with racks in the top and bottom thirds. Line 2 large baking sheets with parchment paper. Pinch off heaping teaspoon-size balls of dough and roll into balls. Place balls on the prepared baking sheets, about 2 inches apart and flatten slightly with the palm of your hand. Bake until puffed, but not browned, about 8 minutes. Remove baking sheets from oven and carefully make a small crater in the middle of each cookie using a teaspoon-size measuring spoon. Fill each crater with ¼ to ½ teaspoon preserves and sprinkle a couple of slivered almonds in preserves. Continue to bake cookies until golden brown on bottom and edges, about 8 minutes more. Cool cookies on baking sheets 5 minutes and then transfer to racks and cool completely. (These cookies can be prepared up to 3 days ahead. Store in an airtight container at room temperature).

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350°F. Spray a 9x13x2-inch metal baking dish with vegetable oil cooking spray. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil cooking spray and set aside. FILLING: In a small bowl, mix together the jam and the apricots. Set aside. CRUST: In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg and vanilla and stir until incorporated. Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan. Using a spatula, spread the filling over the crust leaving a 1/2-inch border around the edge of the pan. Cover the filling with the remaining crust mixture and gently press to flatten. Bake until light golden, about 30 to 35 minutes. Cool for 1 hour. Cut into bars and store in an airtight container for up to 3 days.

1 (13-ounce) jar apricot jam or preserves (about 1 1/4 cups)
8 dried apricots, chopped into 1/4-inch pieces (about 1/3 cup)
CRUST:
1 3/4 cups all-purpose flour
1 packed cup light brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon fine sea salt
3/4 teaspoon baking soda
1 3/4 cups old-fashioned oats
1 cup (4 ounces) coarsely chopped walnuts
1 cup earths best butter melted
1 egg, at room temperature, beaten
1 teaspoon pure vanilla extract

APRICOT ALMOND DREAM COOKIES

A package of dried apricots began this journey, and now they are one of my ultimate cookies. I love the chewiness of these cookies. The white chocolate drizzle is made with white chocolate chips melted with a little cream and cream cheese and powdered sugar. Then, topped with sliced almonds that give these cookies that extra special crunch on top. I hope you love them as much as I do.

Apricot Almond Dream Cookies image

Steps:

  • Preheat oven to 350 degrees. Line a cookie sheet with silpat mat or parchment paper.
  • In the bowl of an electric mixer, cream the butter, light brown sugar and granulated sugar and beat on medium high speed 3-4 minutes until creamy. Add eggs, one at a time, and beat on medium speed after each addition. Add vanilla and almond extract and continue to beat an additional 1 minute.
  • In a medium bowl, whisk together the flour, baking soda and oats. Slowly add to mixing bowl with speed on low until just combined. Add apricots, coconut and almonds and continue to mix on low to combine.
  • Spoon by heaping teaspoons onto prepared cookie sheet and bake 10-12 minutes until golden on the outside and set in the middle when touched with fingertip. Remove and allow to cool 10 minutes on pan.
  • To make drizzle, add white chocolate chips, cream cheese and heavy cream to a medium microwave-safe bowl and heat 1 minute on high. Whisk until smooth. If necessary, heat another 30 seconds and whisk until no lumps remain.
  • Transfer cookies to a plate or cooling rack and drizzle with warm drizzle generously. Sprinkle tops with sliced almonds while before drizzle dries. Makes 36 cookies

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick cookie sheet). In medium bowl, beat 1 cup butter, 3/4 cup powdered sugar and the vanilla with electric mixer on medium speed until smooth. Beat in flour until well blended. Stir in finely chopped apricots.
  • Shape dough into 1-inch balls. On ungreased cookie sheet, place balls 2 inches apart.
  • Bake 8 to 12 minutes or until bottoms are light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In small bowl, beat 1/4 cup butter and the apricot preserves with electric mixer on medium speed until smooth. Beat in 1 cup powdered sugar until well blended. Spread frosting over cookies. Top each cookie with apricot strip.
