SWEET CHOUX PASTRY

Sweet Choux Pastry image

Steps:

  • Preheat the oven to 375 degrees F/190 degrees C.
  • Put 1 1/2 cups/375 ml water, the butter, sugar and salt in a roomy saucepan and bring to a boil. Remove from the heat and add the flour all at once, beating until it forms a ball and pulls away from the sides of the pan. Return the pan to the heat for a minute or two and beat to dry it out a little. (Removing moisture will allow the paste to absorb more egg, which will ultimately make the puffs lighter.)
  • Remove the pan from the heat. Beat in the eggs, the equivalent of one at a time, until fully incorporated. (Do not try to add them at once because they can't be incorporated quickly enough, it makes a total mess, and furthermore you may not need all of them.) After the third addition of egg, add only enough to make dough that will fall, glossy and heavy, from the spoon. Beat in the vanilla. Spoon the dough into a piping bag.
  • Mix a bit of milk into any remaining egg (if no egg left, use only milk). Have at the ready with a pastry brush for glazing. Pipe the dough into evenly-sized (about 1 inch/2.5 cm) balls on a nonstick baking sheet, leaving a good 2 inches/5 cm between them so they have room to expand. Brush the tops with the glaze and press the snouts down with a fingertip. Bake until puffed up, light, dry and golden, 25 to 30 minutes. Cool on a wire rack, so they can breathe all around and will keep their shape and not go soggy.

Light Choux Pastry With Sweet Custard Filling and Fresh Strawber image

Steps:

  • Preheat oven to 425 degrees. Combine the water and butter in a large pot and bring the mixture to a boil. Add in the flour and salt, stirring until the mix takes on the shape of a ball. Move the dough ball into a bowl, and rapidly beat in the eggs, taking care to mix quickly as to not cook the eggs. Use two spoon to roughly mold and transfer the dough to an ungreased baking sheet. Be sure not to use an ice cream scooper, because it will cause your pastries to be too dense and take on a doughnut-hole texture. Bake the pastries for 22-25 minutes until puffy and golden. While still in the oven, use a toothpick or chopstick to poke a whole in each of the pastries. This will allow the hot air to escape, and keep the cream puff from collapsing. Allow to cool completely.
  • To make the egg yolk custard, combine the flour and cornstarch in a small bowl and set aside. On medium heat, combine the milk, vanilla, and butter, allowing it to simmer, but stirring constantly to keep from burning the milk and creating lumps. Beat the eggs and sugar together until frothy. Stir in the mixture, whisking constantly. When combined, add in the flour and cornstarch. Stir constantly until thickened. Add more sugar and vanilla to taste, you want the custard to be sweet.
  • Allow the custard to cool completely. When cool, cut the pastry almost in half. Use a piping bag to pipe the desired amount of custard into the pastry. Add in cut strawberry halves, then pipe just a little more custard to the top to hold the pastry together. Garnish by drizzling melted bakers chocolate over the top with a fork and a dusting of powdered sugar.
  • Best served slightly chilled!

Steps:

  • 1. Bring the water to a boil in a large pot over the stove. (You'll be adding the rest of the ingredients to this pot.).
  • 2. Add the butter and allow it to melt completely.
  • 3. Turn off heat and mix in flour and sugar, followed by eggs and vanilla.
  • 4. Transfer dough into pastry bag (or plastic sandwich bag with 1/4 inch cut off bottom corner).
  • 5. Squeeze dough onto well greased cookie sheet. Form thick lines or dots.
  • 6. Bake 20-25 minutes at 395 degrees. Watch for the top to tan. They should be light brown for the best texture.
  • 7. Wait to cool before filling and/or frosting.

Steps:

  • Equipment: two baking sheets lined with silicon baking sheets; a sturdy ziplock plastic bag; a pair of scissors.
  • Preheat the oven to 420°/ F.
  • Cut up the butter, and put it with the water and salt in a pan. Heat over medium heat until the butter has melted. Dump in the flour, and mix vigorously with a wooden spoon, until the flour is completely incorporated. The dough ball should slightly film the pan with a floury residue. Take off the heat and cool the bottom by putting it on a damp kitchen towel, or briefly running cold water over it.
  • Add the eggs, little by little, to the pan, mixing vigorously between additions. It may look like someone threw up at first, but it will all get incorporated.
  • Scoop the warm dough into the plastic bag. Cut the end off one corner with scissors, to make an opening about .5 cm / 1/4 inch or so. Now you will squeeze the mixture onto the pans - the shape dictates what you'll call it eventually. You can make long blobs, which would make them eclairs, tiny blobs, or bigger blobs. To smooth out any parts that stick up when you squeeze out the dough, just wet your finger in water or milk and smooth out. You can also glaze the puffs with a beaten egg wash, to give a shine to it. In this case use a pastry brush, and smooth out the top with it as you glaze.
  • Baking time also varies, depending on how big your blobs are. For about 5 cm diameter / 2 inch puffs, bake for about 20 minutes, rotating the pans halfway through. (Rotating means to switch the pans so that the top one is on the bottom, and vice versa. You may also want to turn the pans at this point too.) Watch the puffs and when they are a medium brown color, take them out.
  • When the puffs are done, immediately slash into each of them with a serrated knife. This lets out the steam and prevents the inside from getting soggy. You can then return the puffs to the oven for a few minutes. To ensure there will be no sogginess whatsoever, some people cut open the puffs and let them dry out a bit in the oven, but I sort of like some softness inside so omit this step.
  • You can also poach the dough in boiling water, to make light gnocchi. Squeeze blobs of the dough into the salted boiling water and cook until the bits float to the surface. Serve with butter, cheese, fresh parsley and so on.

Steps:

  • Chop butter, melt in water and just bring to boiling. Immediately add flour, and mix well with wooden spoon, until it forms a dough that leaves the side of the pan (it looks really gross and clumpy at first, but as you keep stirring it fixes itself). Remove from heat and cool 2 minutes.
  • For a sweet pastry, add the sugar to the beaten eggs. Stir in the eggs, mixing until it look like dough again (this is gross at first too).
  • Now you have many choices: using a pastry bag or spoon, shape the dough as desired (for puffs: use a spoon or pipe a mound, eclairs: pipe a line, rings: pipe a circle, profiteroles: pipe a mound w/star tip) onto a greased cookie sheet. Keep in mind that it will grow to aprox 3xs its size when done.
  • Bake at 425 'til it looks crisp and golden, about 30 mins for half dollar sized puffs. Cut in half, or cut a slit in the side to let the steam escape- if you don't do this fairly quickly they get soggy inside.
  • They save for a while in tupperware, unless they're filled. You are supposed to fill them with freshly whipped cream that has a touch of powdered sugar and vanilla or almond added in, but I just fill them with buttercream frosting because its cheaper and tastes pretty good too.

Steps:

  • For creampuffs: heat the water and margarine to boiling in a saucepan. Stir in all at once the sifted flour.
  • Stir constantly with a wooden spoon until mixture leaves pan and forms into a ball (about 1 minute). Remove from heat; cool.
  • Beat in the eggs, one at a time, beating until smooth after each addition. Beat mixture until smooth and velvety.
  • Drop from teaspoonfuls onto lightly greased cookie sheet. Bake about 15 minutes in 425 degree oven then reduce heat to 350 degrees and bake for 10-15 minutes more.
  • Remove from oven, gut gash to allow steam to escape (I guess in the middle so you can fill them). Fill with custard filling.
  • For custard filling: melt margarine in a saucepan. Blend in cornstarch, sugar and salt. Gradually add milk. Heat to boiling over direct heat. Stir mixture into slightly beaten egg yolks.
  • Return to heat and cook 2 minutes, stirring constantly. Add vanilla. Cool thoroughly. Makes 2 cups.

  • Line a large baking tray with baking paper. Heat oven to 200C, 180C fan gas 6. Heat the butter in a nonstick pan with 125ml water until melted. Increase the heat until boiling then remove from the heat and quickly beat in the flour until the mixture comes together as a ball. Cool 5 mins then beat the eggs with 1 tbsp water then beat into the pastry a little as a time to make a thick glossy mix.
  • Spoon onto the baking tray in 8 equal size blobs then add the almonds if using poking them into the mixture. Bake for 25-30 mins until well risen and golden. Take from the oven make a slash in the sides and return to the oven for 5 mins more to dry out.
  • While baking make the filling. Mix the custard powder with a little of the milk then, with the remaining milk and vanilla put in a non stick pan and cook, stirring over the heat until thickened. Stand for 5 mins then beat in the yogurt and set aside to cool, stirring frequently to make sure a skin doesn't form. When cold, stir in the grated chocolate.
  • Reserve 1 tbsp of the custard mix then use the rest to fill the buns. Distribute all but 8 halves of strawberries between the buns, then blob a little of the remaining custard filling on top and add the reserved strawberries. Lightly dust with the icing sugar before serving if you like.
