Steps:
- Prepare the barbecue (medium-high heat).
- Drizzle 1 tablespoon of oil over the endive, radicchio and romaine, then sprinkle with salt and pepper. Grill the lettuces until they are crisp-tender and browned in spots, turning occasionally, about 6 minutes. Coarsely chop the lettuces, then toss them in a large bowl with the remaining oil and vinegar. Season the salad, to taste, with more salt and pepper. Serve warm.
LIGHT AND EASY GARLIC POTATOES KAFKA
It doesn't get easier or more delicious to eat a reasonably healthy potato side dish from Barbara Kafka. This comes from her "Microwave Healthstyle Gourmet" book --published in 1989, I've been making it ever since.

Steps:
- Place potatoes in a 1 1/2 quart casserole.
- Add remaining ingredients and stir to coat.
- Cover with either tightly fitting lid or plastic wrap. (Note: I prefer using the plastic wrap, fitted tightly. Do NOT pierce plastic wrap to vent -- the wrap will end up doming during heating, this is a good thing.).
- Cook at 100% for approximately 8 minutes, 1000 watt oven, or until potatoes are tender. (Microwave cooking is terribly easy, once you get the feel for how cooking times play out in your own oven.).
- If using plastic wrap, prick to release steam. (Please be careful, there is a lot of steam. Don't get a steam burn!).
- Voila! Yum!

LINDA'S LASAGNA
This is my mother's wonderful lasagna recipe. It has been a favorite in our family for years!

- In a large pot over medium heat, cook beef until brown. Drain off all fat. Add onion and cook until translucent. Add tomato paste, crushed tomatoes, water, oregano, garlic powder, salt, pepper, and sugar. Stir until combined and cook over medium heat until boiling. Reduce heat to low and simmer for 1 hour.
- While sauce is simmering, blend cottage cheese, Parmesan cheese, and egg until smooth. Set aside.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Spread 1 cup of sauce in the bottom of a 9x13-inch baking dish. Cover sauce with 3 noodles. Cover noodles with 1/3 of the remaining sauce. Top with 1/2 of the mozzarella. Place another layer of noodles and one of sauce over the mozzarella; top that with the cottage cheese mixture. Top with remaining 3 noodles and remaining sauce.
- Bake in preheated oven 30 minutes. Sprinkle remaining mozzarella on top and bake 15 minutes more, until golden and bubbly.

- Pour olive oil on to a baking sheet or cast iron skillet and brush to spread in to a thin even layer. Sprinkle evenly with Kosher salt. Place potato halves, cut side down in a single layer on baking sheet. Roast in preheated oven for about 20 minutes, or until under-side of potatoes are golden brown.
- When potatoes are almost finished roasting, melt butter in a skillet over medium heat. Add garlic and cook, stirring, until garlic is soft and fragrant, but not browned. Turn off heat under pan. Add parsley and thyme. Stir to combine.
- As soon as potatoes are removed from the oven. Spoon in to skillet with garlic herb butter. Toss to coat, then remove to a serving plate. Sprinkle with flaky salt and drizzle with fresh lemon.

- Preheat oven to 400 F or 200 C. Peel potatoes and cut into small cubes. About 2 cm or a little under 1 inch cubes. Wash the starch off and give them a shake to get excess water off. Then place in a mixing bowl.
- Add the minced garlic, olive oil, salt and pepper, and your chosen herbs or spices and give it a good stir to have the potatoes well coated.
- Spread on a baking tray and bake for about 25 - 30 minutes until golden brown. Halfway through baking, use a spatula and turn the potatoes over so they brown and crisp evenly. When done, serve hot.
