LISA'S COLLARD GREENS

I love collard greens and I make them for Thanksgiving and Christmas and more holidays. I cook collard greens with hamcocks. It is so good to eat with cracklin cornbread. They are so delicious and tasty.

Steps:

  • 1. Wash collard greens and cut the stems out and shred collard greens. Put water in the large pot and add hamcocks and let it cook for 20 minutes and add collard greens. Add olive oil, sugar, red pepper flakes and salt. Bring to a boil and reduce to medium heat. Cook for 3 hours until the collard greens are tender and done.

1 collard greens, bunch
2 hamcocks
2 Tbsp olive oil
1 Tbsp sugar
1 Tbsp red pepper flakes
salt to taste
water

BEST EVER COLLARD GREENS

This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

Steps:

  • Heat broth.
  • Add remaining ingredients.
  • If there is not enough broth to cover greens, add more.
  • Bring to a boil, then reduce heat& simmer for about 3 hours.
  • Remove bay leaves.

2 smoked ham hocks (or shanks)
4 -6 bunches collard greens (or other greens)
salt & pepper

Steps:

  • For the seasoning mixture: In a small bowl, combine the paprika, salt, onion powder, black pepper, cayenne, garlic powder, mustard and thyme. Mix to blend. Set aside.
  • For the collards: Remove the stems and ribs from the collard greens. Stack the leaves and roll them up like a cigar. Slice into 1-inch strips. Wash in cold water and shake off excess.
  • Heat the olive oil in a large stockpot over medium-low heat. Add the bacon, onions and garlic; saute until the onions have softened and are just starting to color, 10 to 12 minutes. Stir in 1 tablespoon of the seasoning mixture and mix well. Add the chicken stock, vinegar and 2 cups water. Stir, then add the collard greens and ham hock to the pot. Bring to a boil, cover and reduce to a simmer. Cook for about 2 hours, or until the collards are tender, stirring every 20 minutes.
  • Remove the ham hock and pull all the meat from the bone. Chop into smaller pieces, then return to the pot. Stir to combine. Remove the collard and meat mixture from the pot, shake off excess cooking liquid and transfer to a serving plate.

1/2 yellow onion, diced
4 large cloves garlic, chopped
5 cups chicken stock (store-bought or homemade)
2 tablespoons white wine vinegar
1 smoked ham hock

Steps:

  • Thoroughly wash collard greens, be sure to pull leaves apart and remove any sand. In a medium saucepan, bring 3 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover. Cook ham hocks until slightly tender and remove from pan. In the same saucepan, add collard greens and remaining ingredients. Cover and cook greens for 2 1/2 to 3 hours until water reduces, add more water and additional salt and sugar, to taste.

5 bundles collard greens
3 cups salted water
3 large smoked ham hocks
1 cup sugar
1/2 cup salt
3 tablespoons crushed red pepper flakes

Steps:

  • In a high-sided skillet, cook the bacon over medium heat until brown, about 5 minutes. In the same pan add the onions and saute until translucent, about 5 minutes.
  • Strip the leaves from the tough stems of the collard greens. Stack the leaves, roll them up and cut them into thin strips.
  • To the skillet with the bacon and onions, add the garlic and red pepper flakes, brown sugar, cider vinegar, salt and pepper, to taste. Add the greens, stir and cover the skillet. Cook for 15 minutes, stirring halfway though. Collards are done when tender and no longer bitter. Remove from heat to a serving bowl. Serve the greens with the Light and Crispy Fried Chicken, if desired.
