Steps:

  • In a medium bowl, stir together the salted salmon, tomatoes, white onion, green onion, sea salt and cayenne pepper. Chill for at least 30 minutes before serving. Serve chilled.

Steps:

  • To make the ginger juice:.
  • Combine 1 cup peeled & grated ginger, with 4 cups boiling water. Strain. Alternatively you can boil the ginger until it reaches desired strength.
  • You can also run fresh ginger through a juicer, if you have one, but the result is much more potent, so you won't need as much in the recipe.
  • Ginger juice keeps for at least a week in the fridge.
  • To make the Lomi Lomi:.
  • I have put it in cups to make it easy, but here is the method to make as much or as little as you want.
  • Mix 1 part ginger juice(1 cup), 1.5 parts lime juice(1 1/2 cups) and 1-3 parts honey (1-3 cups or to taste).
  • Mix with lots of crushed ice, or blend the Lomi Lomi and ice together, like a frozen margherita(yum!).
  • You will have enough ginger juice to make 3 more batches of Lomi Lomi!
  • NOTE: Be sure to thoroughly mix the honey into the juices first while still hot, before adding the ice, or the honey will harden like rock and wont blend into the drink.

Steps:

  • Cure the salmon in salt by putting a layer of Hawaiian salt in the bottom of a glass dish. Lay a salmon in it and gently press down. Sprinkle more salt on top and rub it all over the salmon. Top with even more salt, cover, and place in the refrigerator for 24 hours to pull out the water. Table salt is not recommended for this process.
  • Rinse the salmon thoroughly in cold water to wash away a lot of the salt then blot dry. Cut the salmon in cubes and place in a bowl and add tomatoes, Maui onion, green onion and chiles. Cut the pineapple in half lengthwise. Make crisscross cuts in the flesh and scoop out the inside pineapple chunks; add to the bowl. Squeeze in the lime juice, add oil and black pepper, then toss the mixture to combine all the ingredients. Cover and chill for 1 hour. Scoop the mixture into the split pineapple shell and display as a decorative bowl. To eat, spoon the salmon salad into a lettuce cup.

1 bunch green onions, chopped
2 red Hawaiian chiles, chopped
1 pineapple
1 lime, juiced

Steps:

  • Place salmon and salt in a ziploc bag. Shake to coat fish. Refrigerate 8 hours or overnight.
  • Rinse salmon, then soak in ice water 2 hours, changing the water every 30 minutes. remove, pat dry, dice, and set aside.
  • Soak white onion in ice water 15 minutes. Drain well.
  • Add onions and tomato to salmon and mix well. Divide among 16 lettuce leaves.

  • Remove fish from bag, rinse well. Soak in ice water, changing water every 30 minutes, for 2 hours. Drain fish, pat dry, dice.
  • Meanwhile soak diced onion in ice water for 15 minutes.
  • Add onions and tomatoes to fish.
  • Spoon fish into lettuce leaves. Iceberg or romaine work well.
