LOW CAL VEGAN APPLESAUCE PANCAKES FOR ONE OR TWO
I have adapted this from several similar recipes on here, most call for milk but I use water. And scaled down the recipe so it works for one or two! I have listed it without sugar because I prefer to keep it basic and add yummy toppings, but it also works with adding 1-2 tsp sugar. This is the base recipe, add to it anything you want (like cinnamon, sugar, chocolate chips, berries, banana etc).

Steps:
- Mix all ingredients together in a medium sized bowl until smooth.
- Let it sit for a couple of minutes (literally, maybe 2 minutes).
- Heat a non-stick skillet/pan to medium heat.
- Cook mixture as you would normal pancakes, flipping over to the other side once bubbles appear.
- Serve with yummy toppings! I like to use Greek yogurt + fruit puree with some chocolate chips.

EASY LOW-FAT VEGAN PANCAKES
An easy and low-fat vegan pancake recipe. Add-ins like blueberries or dairy-free chocolate chips work well, and these freeze well also.

Steps:
- Combine the 5 dry ingredients (flour, sugar, baking powder, salt, cinnamon) in a bowl.
- Add the soy milk and applesauce to your mixture.
- Mix until smooth - do not overmix.
- Let the batter sit breifly while heating pan over medium heat.
- Spoon one pancakes' worth of the mixture into the pan.
- Flip when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
- Repeat until the batter is gone.

- Add in the applesauce and plant-based milk. Whisk until incorporated. Let the batter sit for a few minutes.
- Spray a flat pan or griddle with oil and heat it up to medium to low heat. Add an ice cream scoop full or a small ladle of pancake batter*. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula. Let it cook on the other side until done. Repeat for all the pancakes. You should be able to get about 6 pancakes out of the batter.
- Stack the pancakes, top them with stewed apples; or with more applesauce, cinnamon powder, and maple syrup.

- Preheat: Heat griddle as per instructions or if using a large skillet heat over medium to medium-high heat. Meanwhile, preheat oven to 200 degrees F, and place a baking sheet on the middle rack while oven is heating.
- Prepare: In a large mixing bowl, add flour, sugar, baking powder, cinnamon, nutmeg and salt, mix well. Next, add in the applesauce, non-dairy milk and vanilla extract, mix until just combined, do not over mix. Your mixture may seem to swell up a bit due to the baking powder, this is normal.
- Cook: Place 1 teaspoon of oil on the griddle/skillet and spread evenly over the cooking area (I use a silicone brush). Place 2 apple slices on griddle, side by side, where pancake batter is going to cook. Using a 1/4 cup measuring cup, scoop batter and place on top of apple slices. Cook until bubbles form on the top and edges start to look leathery, about 2 1/2 – 3 minutes per side. Flip pancakes, cook another 2 – 3 minutes. Repeat until batter is gone.
