LOW CAL VEGAN APPLESAUCE PANCAKES FOR ONE OR TWO

I have adapted this from several similar recipes on here, most call for milk but I use water. And scaled down the recipe so it works for one or two! I have listed it without sugar because I prefer to keep it basic and add yummy toppings, but it also works with adding 1-2 tsp sugar. This is the base recipe, add to it anything you want (like cinnamon, sugar, chocolate chips, berries, banana etc).

Low Cal Vegan Applesauce Pancakes for One or Two image

Steps:

  • Mix all ingredients together in a medium sized bowl until smooth.
  • Let it sit for a couple of minutes (literally, maybe 2 minutes).
  • Heat a non-stick skillet/pan to medium heat.
  • Cook mixture as you would normal pancakes, flipping over to the other side once bubbles appear.
  • Serve with yummy toppings! I like to use Greek yogurt + fruit puree with some chocolate chips.

Easy Low-Fat Vegan Pancakes image

Steps:

  • Combine the 5 dry ingredients (flour, sugar, baking powder, salt, cinnamon) in a bowl.
  • Add the soy milk and applesauce to your mixture.
  • Mix until smooth - do not overmix.
  • Let the batter sit breifly while heating pan over medium heat.
  • Spoon one pancakes' worth of the mixture into the pan.
  • Flip when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
  • Repeat until the batter is gone.

  • Add in the applesauce and plant-based milk. Whisk until incorporated. Let the batter sit for a few minutes.
  • Spray a flat pan or griddle with oil and heat it up to medium to low heat. Add an ice cream scoop full or a small ladle of pancake batter*. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula. Let it cook on the other side until done. Repeat for all the pancakes. You should be able to get about 6 pancakes out of the batter.

  • Preheat: Heat griddle as per instructions or if using a large skillet heat over medium to medium-high heat. Meanwhile, preheat oven to 200 degrees F, and place a baking sheet on the middle rack while oven is heating.
  • Prepare: In a large mixing bowl, add flour, sugar, baking powder, cinnamon, nutmeg and salt, mix well. Next, add in the applesauce, non-dairy milk and vanilla extract, mix until just combined, do not over mix. Your mixture may seem to swell up a bit due to the baking powder, this is normal.
  • Cook: Place 1 teaspoon of oil on the griddle/skillet and spread evenly over the cooking area (I use a silicone brush). Place 2 apple slices on griddle, side by side, where pancake batter is going to cook. Using a 1/4 cup measuring cup, scoop batter and place on top of apple slices. Cook until bubbles form on the top and edges start to look leathery, about 2 1/2 – 3 minutes per side. Flip pancakes, cook another 2 – 3 minutes. Repeat until batter is gone.
