REDUCED FAT FRENCH TOAST
This is an easy variation on the basic French toast recipe, except it uses reduced fat substitutes! Serve with fruit or sugar-free maple syrup.

- Beat together egg substitute, milk, vanilla and cinnamon. Dip bread slices in egg mixture until both sides are soaked.

- Place bread cubes in a greased 13x9-in. baking dish. In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour over bread. Cover and refrigerate for 8 hours or overnight. , Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Dot with butter. Combine sugar and cinnamon; sprinkle over the top. , Cover and bake until a knife inserted in the center comes out clean, 45-50 minutes. Let stand for 5 minutes. Serve with maple syrup if desired.

EASY FRENCH TOAST CASSEROLE
Delicious and decadent, simple spin on French toast. Got the idea from a bed and breakfast in the south. Add additional ingredients; we like blueberries and cream cheese, cinnamon apples, nuts, and dried fruit!

Steps:
- Grease a 9x12-inch baking dish.
- Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
- Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
- Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
- Bake in the preheated oven until browned and bubbling, about 30 minutes.

- Spray a 9 by 13-inch baking pan with cooking spray. Arrange the bread in a single layer in the baking pan. Whisk together the eggs, egg whites, milk, vanilla, cinnamon and maple syrup. Pour the egg mixture over the bread in the pan, spreading it around so the liquid saturates the bread. Scatter the blueberries evenly on top and sprinkle with the almonds and brown sugar. Cover and refrigerate overnight.
- Preheat the oven to 350 degrees F. Uncover the baking pan and bake for 40 to 50 minutes. Serve warm, cold or at room temperature.

- Preheat oven to 400 degrees.
- Spray 13 x 9 inch baking pan with nonstick coating.
- Layer bread evenly in bottom of baking pan.
- Beat together milk, 1/4 cup honey, salt, vanilla and 1 teaspoon cinnamon until well blended; then mix in beaten eggs with above mixture.
- Pour batter evenly over torn bread.
- Core and slice apples, leaving peelings on.
- Layer apple slices evenly over top and drizzle with 1/2 cup of honey.
- Sprinkle remaining cinnamon over top of casserole.
- Bake for 35 to 45 minutes or until bread layer isn't soggy.
- Cut into 12 pieces while warm and serve with additional honey, if desired.

- Slice loaf into 8 very thin (1/2 inch) slices and 8 thick (1 inch) slices. Place the 8 thin slices into the bottom of a greased 9x13 pan.
- Spread blueberries evenly over thin bread.
- In a bowl combine cream cheese, yogurt, sugar, and vanilla. Spread mixture over blueberries.
- Place thick bread slices over cream cheese mixture.
- Beat egg substitute, milk, evaporated milk, cinnamon, and nutmeg and pour over bread.
- Cover with aluminum foil and refrigerate 8 hours or overnight.
- Bake at 350 degrees for 45 minutes covered,and then uncover and bake for 15 more minutes. Let cool for 15 minutes.
- To serve, take out individual slices and flip over so blueberry and cream topping is on top. Sift powdered sugar over the top and serve.
YUMMY LOW-FAT FRENCH TOAST
Here's a super tasty and yummy low fat French toast recipe. My family loves French toast and this recipe is good for you as well as quick and easy. My mom always fixed French toast for us in the skillet. For those that aren't worrying about weight, you could use 6-8 eggs and regular milk.... We always topped this with powdered sugar when growing up.
