LOW SUGAR CANDIED POPCORN

This popcorn has only 8.5 carbs per serving. A friend of mine's daughter has diabetes. She was looking for a popcorn recipe that was diabetic friendly. I stumbled upon this recipe. This is a really great recipe.

Steps:

  • 1. spray baking sheet with cooking spray
  • 2. pop the popcorn
  • 3. in a large bowl place popcorn.in a small bowl-add egg white molasses,and vanilla,salt,and granular splenda. Whisk ingredients well.
  • 4. add peanuts and stir well.pour over popcorn,and toss until coated.
  • 5. put in baking sheet,and bake at 325 for 20-25 minutes.turn it a bit while baking.
  • 6. pour on to waxed paper or parchment paper and let cool.cool to room temp. before serving.
  • 7. Nutrition information 8.5 carbs per serving 3 grams of sugar per cup 100 calories per cup

13 c fresh air popped popcorn

2 Tbsp dark molasses

3/4 c splenda (sugar substitute)

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Oil a 10x15 inch baking pan with sides.
  • Place popcorn and peanuts into a large, metal bowl, and set aside. Stir together the sugar, corn syrup, cocoa powder, and butter in a saucepan over medium-high heat until it comes to a boil. Boil for 2 minutes. Stir in the vanilla, then pour over the popcorn. Stir until the popcorn is well coated. Spread the popcorn into the prepared pan.
  • Bake in preheated oven for 30 minutes, stirring several times.
  • Remove from the oven, and allow to cool to room temperature. Break into small clumps, and store in an airtight container.

The hardest decision was always what colour to choose. This recipe was given to me from a friend. This recipe makes 5 to 6 cups of delicious candied popcorn This syrup gets extremely hot-please watch it cooking the WHOLE time it is on the stove. Be very careful not to get any on your hands.

Steps:

  • Heat oil in a large pan over a medium to high heat. Add the popping corn and cover. Shake the pan occasionally, until the popping stops. Or, the other option is to use the microwave or a popcorn maker.
  • Transfer the popped corn to a large bowl, removing any unpopped corn kernels. If you have a seriously large metallic bowl you can later pour in the candy over the top of the popcorn -The bowl must be big enough to be able to toss the popcorn without it spilling over.
  • Using a heavy based pan, combine the sugar, water and food colouring. Stir over heat, without boiling, until the sugar has dissolved . Use the largest saucepan/boiler that you can find.
  • Please stand-by the stove whilst the candy is boiling, you will need to stir the mixture frequently. Bring to the boil. Boil uncovered for about 12 to 15 minutes. The temperature should be 150°C using a candy thermometer. If you do not have a thermometer drop a teaspoon of the candy mixture into a glass of water- the mixture should crack.
  • Remove the candy mixture from the heat. Add the popcorn and stir quickly (and I do mean quickly!) to coat the popcorn with the candy.
  • Spread the popcorn on foil lined trays to cool. Separate the popcorn as it is cooling with a wooden spoon or hands (be careful it is not too hot though!).
  • Store in an airtight container for 3 - 4 days. The candied popcorn is best eaten after the candy has fully set and dried.

Steps:

  • Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
  • Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
  • Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.

  • Let's first make the caramel.. You will need a deep pot for this!! Slowly heat up your Swerve sweetener on medium-low.. stirring so it doesn't burn. It will slowly melt and caramelize. It will also smoke a little, so dont be alarmed. Once you have a deep amber colour, time to add in the butter.
  • When you toss in the butter, you'll notice that it will bubble up. That's normal and why we used a deep pot for it. Stir until the butter has melted.
  • Pour in your cream., Again, the mixture will bubble up even more and then slowly go back down. All normal! Stir for an additional 2-3 minutes then take the mix off the heat.
  • Let it cool down.. Stir occassionally to get rid any crystalization of the Swerve. Once gets near room temp, you'll notice it has gotten thicker and has the consistency of caramel sauce!
