SHORECOOK'S CRANBERRY-APPLE CRISP
This is an easy way to enjoy a yummy dessert that looks like you spent hours in the kitchen. Using canned sliced apples makes this a breeze to put together. Topping with vanilla ice cream makes it a winner!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square glass baking dish and set aside.
- Drain apple slices and place in the baking dish. Randomly scatter cranberries among the apples.
- Combine flour, sugar, and butter in a food processor. Process until pea-sized crumbs are formed, stopping just short of it being cookie dough. Cover the apples with the crumb mixture.
- Bake in the preheated oven until golden brown, about 45 minutes. Remove from the oven and sprinkle with cinnamon. Serve warm topped with a scoop of ice cream.

LOWER FAT CRANBERRY APPLE CRISP
This is a remake using less fat that I found on the Florida Herald Tribune website. Love to get the same taste using less fat! NOTE: finally got around to making this, and for my taste it is way too tart. I would either add more sugar to the cranberries or use dried to begin with. I'd forgotten just how tart fresh cranberries can be!

- Spray a 9-by-9-inch pan with nonstick cooking spray and set aside. Preheat the oven to 350°F
- Combine the oatmeal, flour, brown sugar and cinnamon. Pour the butter and water over the oatmeal mixture. Stir and work with hands until well combined and crumbly. Set aside.
- Combine the cranberries, apples and sugar. Pour into the prepared pan. Sprinkle crumbs evenly over the top.
- Bake for 50 to 60 minutes, or until the apples in the center are done. The top should be browned and the edges bubbling. Makes 9 servings.

- Preheat oven to 350°F.
- Combine butter and sugar in the bowl of an electric mixer; beat until light and fluffy, about 1 minute. Add eggs and beat for 30 seconds; add applesauce and beat just to mix.
- In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Mix in oats. Add apples, cranberries and walnuts; combine by hand.
- Coat cookie sheet with cooking spray. Drop batter by heaping tablespoons 1 inch apart. Bake until cookies are lightly browned and firm, about 13 to 15 minutes.
