LOW FAT APPLE BRAN MUFFINS
I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

Steps:
- In a small bowl, combine bran and buttermilk. Set aside to soak for 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin pan, or use paper liners.
- In a large bowl, mix together flour, brown sugar and baking soda. Stir in bran mixture and egg whites. Fold in grated apple. Divide batter into 12 muffin cups.
- Bake in preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before removing from the pan.

- In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
- Combine buttermilk, egg, orange rind and juice in a separate bowl.
- Stir wet ingredients into dry ingredients, mixing just until moistened.
- Stir in apples and raisins.
- Spoon into greased muffin tins.
- Sprinkle with wheat germ.
- Bake at 400 for 18-20 minutes.

- Spray muffin tins with pan-spray.
- (these tend to stick to paper cup cake liners).
- Mix first 4 ingredients; set aside.
- Mix egg substitute, juice, milk and oil; add fruit and mix into dry ingredients till just moistened.
- Pour into prepared muffin tins.
- Bake 15-17 minutes.

- Preheat ove to 400.
- Spray 6 large 3" muffin cups with no-stick spray.
- In large bowl, stir oat bran, brown sugar and baking powder. Make a well in the center.
- In a small bowl, beat the egg whites until foamy. Stir in buttermilk and molasses.
- Add buttermilk mixture to the oat-bran mixture and stir just until moistened. Fold in apples and apricots.
- Spoon the batter into the prepared cups, filling each 3/4 full.
- Bake for 18 to 20 minutes.
- Cool in muffin cups for 5 minutes, then remove and cool on a wire rack.
- NOTE:.
- To make standar sized muffins spray 12 2 1/2" muffin cups with no-stick spray, spoon batter into cups. Bake for 15 to 17 minutes.
LOW FAT BRAN MUFFINS
I was given this recipe by my sister-in-law who went to Weight Watchers. She advised that they were worth 1 point. I guess that all depends on the size we make the muffins. I make mine larger so I would think they would be 2 points. I find them quite tasty.

- Mix dry ingredients in a lage bowl and make a well in the centre.
- Beat eggs and egg whites in a separate bowl and add all liquid ingredients.
- Add to dry mixture and mix well.
- Refrigerate overnight.
- Preheat oven to 400°.
- Stir batter well and fill regular muffin tins 2/3 full.
- Bake for 17-20 minutes.
- Batter will keep well in fridge at least one week.

SUPER YUMMY LOW FAT BRAN MUFFINS
These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.
