Steps:
- Preheat the oven to 375 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.
- Bring a large pot of water to a boil. Add the macaroni and cook until tender but firm, about 5 to 8 minutes. Drain and transfer to a large bowl.
- Meanwhile, place the frozen squash and milk into a large saucepan and cook over a low heat, stirring occasionally and breaking up the squash with a spoon until defrosted. Turn the heat up to medium and cook until the mixture is almost simmering, stirring occasionally. Remove the pan from heat and stir in the Cheddar, Jack cheese, ricotta cheese, salt, mustard and cayenne pepper. Pour cheese mixture over the macaroni and stir to combine. Transfer the macaroni and cheese to the baking dish.
- Combine bread crumbs, Parmesan and oil in a small bowl. Sprinkle over the top of the macaroni and cheese. Bake for 20 minutes. Then broil for 3 minutes so the top is crisp and nicely browned.

- Preheat oven to 400 degrees. Bring a large pot of water to a boil. Butter a shallow 4-quart baking dish (oval or 9-by-13-inch rectangle); set aside.
- Generously salt boiling water; add pasta. Cook, according to package instructions, until 2 minutes short of al dente. Drain pasta, and return to pot.
- While pasta is cooking, melt butter in a large saucepan over medium. Transfer 2 tablespoons melted butter to a small bowl; set aside for topping. Add flour and mustard powder to remaining butter in saucepan. Cook, whisking, 1 minute (do not let flour darken). Whisk in milk. Bring to a boil; reduce heat to medium-low, and simmer until sauce is thickened, 2 to 3 minutes.
- Remove sauce from heat. Gradually whisk in cheeses; add Worcestershire sauce, and season generously with salt and pepper. Add sauce to pasta, and toss to combine; transfer to prepared baking dish.
- Place bread in food processor; pulse until very coarse crumbs form (you should have about 3 cups). Add reserved melted butter, and pulse just to moisten. Scatter crumbs over pasta in baking dish. (If making ahead, cover and refrigerate up to 1 day.)
- Place dish on a rimmed baking sheet, and bake until topping is golden and sauce is bubbling, 15 to 20 minutes. (If refrigerated, bake for 30 to 35 minutes.) Cool 5 minutes before serving.

MACARONI AND CHEESE

- Preheat the oven to 450 degrees F.
- Bring 2 gallons of water with 1/4 cup salt to a boil in a large pot. Cook the pasta to al dente, about 8 minutes. Drain and cool immediately in the refrigerator or on a flat cold baking sheet.
- Melt 4 ounces of the butter in a separate pot. Whisk in the flour, stirring constantly for about 5 minutes, making sure there are no lumps. Stir in the milk, onions, paprika, mustard and bay leaves and simmer for 10 minutes. Remove the bay leaves and stir in the cheeses in batches, being careful not to break the sauce. Season with the salt and pepper.
- Fold the macaroni into the hot cheese and pour into a 9-inch cast-iron casserole dish. Top with a big pinch of Cheddar. Melt the remaining butter in a pan and stir in the breadcrumbs, herbs and some salt and pepper. Scatter the topping over the cheesy mac and bake until lightly brown on top, 12 to 15 minutes. Serve.
ULTIMATE MACARONI AND CHEESE

- In a saucepan over low heat, add oil then the onions sweat until translucent. (no color) Add the butter. When butter is melted, stir in the flour, stir until smooth. Meanwhile, in a separate bowl, heat the milk and wine until it boils. Remove from the heat, stir in the paprika, cheese, season to taste with nutmeg, white pepper, and salt. Mix in your cooked macaroni and serve immediately. Note: If you like to turn this dish into a casserole, preheat the oven to 350 degrees, place the macaroni and cheese into a casserole dish, sprinkle 3 tablespoons grated Parmesan cheese on top, then sprinkle 1 tablespoon dried bread crumbs on top of the cheese. MACARONI AND CHEESE

- Preheat oven to 350 degrees. In a 2-quart saucepan, melt butter then incorporate flour to make roux. With a wire whisk slowly pour in milk, whisking vigorously to avoid lumps. Once milk is incorporated, sauce is made. Simmer for ten minutes to remove flour flavor. Finally fold in two pounds of grated Cheddar. Season with salt and pepper. In a large mixing bowl combine elbow macaroni with cheese sauce. Mix well. Pour into casserole pan and bake at 350 degrees for thirty minutes or until crunchy golden brown.

I had some leftover turkey and veggies and ran out of gravy and ideas, so I decided to turn my leftovers into the ultimate comfort food. I'm not an "exact science" cook, so please adjust according to your preferences! Also, good mac and cheese is all about the roux.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain pasta, then rinse with cold water and drain again. Set aside.
- While the pasta is cooking, melt 1 1/2 tablespoons butter in a skillet over medium heat. Add onion and saute until translucent, 5 to 7 minutes. Add garlic and cook until fragrant, 1 to 2 minutes. Add carrots and celery; saute until soft, 3 to 5 minutes. Add leftover turkey and cook until warm and flavors are incorporated, about 1 minute. Season with parsley, sage, rosemary, thyme, salt, and pepper. Add broth if mixture seems dry. Remove from the heat and set aside.
- Melt remaining butter in a large saucepan over medium (or slightly higher) heat. Whisk in flour; cook, whisking constantly, until the mixture becomes paste-like and light golden brown, 2 to 3 minutes. Whisk in milk (about 1 to 2 tablespoons); keep stirring to make sure flour is blended and there are no lumps. Cook until roux is brown and very fragrant. Add Cheddar, Monterey Jack, Gouda, and Parmesan cheeses; cook until sauce thickens and the cheese melts. Slowly add enough milk so the roux/cheese mix is creamy; just add it in small increments so it's not too juicy.
- Add macaroni to the cheese sauce and mix to combine. Add the turkey mixture. Mix well and transfer to a baking dish. Top with bread crumbs.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place mac and cheese under the broiler until browned, 5 to 10 minutes.

SPICY MAC 'N' CHEESE BITES RECIPE BY TASTY

- Make the mac 'n' cheese: Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and transfer to a large bowl.
- Return the pot to medium heat. Add the butter, flour, ½ teaspoon salt, and pepper and cook, whisking, for 2 minutes, or until the butter is melted and the mixture is evenly combined. While whisking constantly, slowly pour in the milk and cook until the sauce starts to thicken, 3-4 minutes. Remove the pot from the heat, add the Frank's RedHot® and cheddar cheese, and stir until the cheese is melted.
- Pour the sauce into the bowl with the macaroni and stir until the pasta is well-coated. Let cool for about 20 minutes.
- Assemble the fried mac 'n' cheese: Line a baking sheet with parchment paper. Once the mac 'n' cheese has cooled, add the mozzarella cheese and stir to combine.
- Scoop the mac 'n' cheese mixture into 1½-inch bites, rolling into smooth balls, and place on the prepared baking sheet. Freeze for 20 minutes.
- Heat the canola oil in a heavy deep pot over medium-high heat until the temperature reaches 375°F (190°C).
- In the meantime, in a shallow bowl, whisk together the eggs and water until well-combined. Add the panko bread crumbs to a separate shallow bowl. Coat the mac 'n' cheese bites in the egg wash, then cover completely in the bread crumbs.
- When the oil is hot, add the mac 'n' cheese bites to the hot oil and fry for 2-3 minutes, or until golden brown (work in batches to avoid overcrowding the pot). Transfer to a paper towel-lined plate to drain and immediately sprinkle with salt.
- Arrange the bites on a serving platter and drizzle with Frank's RedHot® or serve in a dish alongside for dipping.

- Note: If you don't have a thermometer, test the temperature of the oil using a wooden chopstick. Dip the tip of the chopstick in the oil. The oil is hot enough to fry when bubbles form around the chopstick.

- Place bread in a medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour butter into bowl with bread, and toss. Set breadcrumbs aside.
- In a medium saucepan set over medium heat, heat milk. Melt remaining 6 tablespoons butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, whisking, 1 minute.
- While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
- Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, dijon mustard, cheddar cheese, and Gruyère; set cheese sauce aside.
- Cook macaroni 2 to 3 minutes less than manufacturer's directions. Transfer macaroni to a colander, rinse under cold running water, and drain well. Stir macaroni into the cheese sauce
- Pour mixture into prepared dish. Sprinkle breadcrumbs over top. Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool 5 minutes; serve hot.
