SALMON PASTA SALAD

This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

Salmon Pasta Salad image

Steps:

  • In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

1 package (8 ounces) spiral pasta, cooked and drained
2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) pink salmon, drained, bones and skin removed
1-1/2 cups quartered cherry tomatoes
1 medium cucumber, quartered and sliced
1 small red onion, sliced
1/2 cup canola oil
1/3 cup fresh lemon or lime juice
1-1/2 teaspoons dill weed
1 garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 head lettuce, torn

We make pasta salad quite a bit in our house & this is definitely one of our very favourites. The kids wolf this down! It is great as a light lunch, a side dish, on a picnic etc. You can add ingredients or change them round to suit your tastes or what you have on hand.

Mama's Smoked Salmon Pasta Salad image

Steps:

  • in a large bowl or pot, mix the mayo with the salmon & seasonings.
  • Add the rest of the ingredients & mix well.
  • You can add more mayo or a simple vinigrette if you want a creamier salad.
  • Serve or store in an airtight container in the fridge for up to 48 hours.

6 cups cooked pasta (we like penne or the med. shells for this)
120 g smoked salmon, finely sliced
3/4 cup garlic mayonnaise
1 cup lettuce, shredded
3/4 cup cucumber, peeled & finely sliced (we use English cukes)
1/4 cup sweetcorn
1 carrot, grated
1 red bell pepper, finely diced
1/4 teaspoon paprika
1/2 teaspoon mixed Italian herbs
salt and black pepper
1 teaspoon lemon juice
2 eggs, hardboiled & chopped
2 small pickled cucumbers, finely sliced

SMOKED SALMON PASTA SALAD

This summer I brought home some smoked salmon from our cruise to Alaska as well as the cookbook "Cooking Alaska's Wild Salmon" by Kathy Doogan. I made this recipe from the cookbook using the smoked salmon. It was really delicious. The times noted do not include chill time before serving. (Note, the recipe is slightly adapted to suit our tastes.)

Smoked Salmon Pasta Salad image

Steps:

  • Combine the olive oil, mayonnaise, mustard, balsamic, garlic, salt and pepper in a small bowl. Whisk until smooth. Cover and chill.
  • Cook pasta according to package directions. Drain, and cool the pasta by running cool water over it. Drain it again when cooled.
  • Pour pasta into a large bowl. Add the onion, celery, bell pepper, capers, Parmesan, salmon and pine nuts. Pour the dressing over all and toss gently until well combined. Chill thoroughly before serving.

  • Bring a large pot of water to boil over medium-high heat with a generous pinch of salt. Cook pasta to al dente, according to package directions (generally about 10 minutes). In the last minute of cooking, add the frozen peas directly to the pot with the boiling pasta to defrost. Once the pasta is cooked through and the peas are no longer frozen, drain the pasta in a colander and give it a good rinse under cold water to remove excess starch and help cool the pasta down quicker. Reserve drained pasta and peas to the side.
  • In a medium mixing bowl, combine the Greek yogurt, mayo, garlic-infused olive oil (or olive oil + minced garlic cloves), Champagne vinegar, Dijon mustard, lemon juice and zest, chives, dill, Kosher salt, and a few cracks of black pepper to taste with a silicone spatula until well-combined.
  • Transfer the cooled pasta and peas to a large bowl and top with the dressing, scraping the bowl with the silicone spatula to empty. Gently toss the dressing with the pasta and peas until well-combined.
  • Add the smoked salmon, cucumber, and tomatoes to the bowl and gently toss to combine. Taste for salt and pepper and adjust if needed. Serve immediately or, if preferred, this dish does well prepped up to one day in advance and stored in an air-tight container in the fridge to chill until ready to use.
