Mango-Guava Batidos image

Steps:

  • Combine 3 cups guava nectar, 1 cup milk, 1 1/2 teaspoons vanilla and 3 tablespoons sugar in a large bowl; add 3 cups frozen mango chunks. Working in batches, puree in a blender until smooth and frothy. Divide among small glasses.

MANGO-COCONUT BATIDO (MILKSHAKE)

Tropical fruits such as mangoes, papayas, bananas, guavas, and coconuts are combined with milk, ice and sometimes sugar to create a Cuban milkshake called a *batido*. This Key West shake is a cultural hybrid, however, because it also contains vanilla ice cream.

Steps:

  • Place milk, cream of coconut, and mango in a blender.
  • Pulse to mix well.
  • Add ice cream and vanilla.
  • Process on high until well mixed and frothy.
  • Pour milkshake into 2 glasses.
  • Sprinkle toasted coconut on top of milkshake.
  • NOTE: Cream of coconut is popularly marketed as "Coco Lopez" and is highly sweetened. You'll find cream of coconut in the supermarket drink mixer section. If instead you use coconut cream, such as that marketed by "Ocho Rios", you should add 2 tablespoons of sugar to the milkshake. Coconut cream will be in the baking section of your supermarket.

2 ounces cream of coconut
1 cup cubed mango
1 cup low-fat vanilla ice cream
1 teaspoon vanilla extract
2 tablespoons grated coconut, toasted

MAMEY MILKSHAKE

"Batido." This pretty little word is well known all over Latin America and to many in South Florida as well. A sweet and frothy fruit milkshake, it's as varied as the currently available fruits in season. Guanabana, mamey, atemoya, coconut, cherimoya, banana, tamarind and many others-all contributing their gorgeous colors and enticing fragrances! Put the pulp of any tropical fruit or fruits in an electric blender with a little ice, a splash of milk and hit the blend button. Moments later, in a frosty glass, a delicious, healthy, delectable fruit smoothy is waiting for you. The buttermilk is my own addition. If you like the tangyness of sour cream ice cream or crème fraîche you will like this as well. If not, you can omit the buttermilk and go the standard batido route. It's all good.

Steps:

  • Measure all the ingredients or use a tall glass for speed - they don't have to be exact. Put them into a blender and blitz until smooth. Pour into 1 tall glass (you'll have enough for a top up) or two short tumblers. Cut the passion fruit in half, if using, and scrape the seeds on top.
