MANGO CAKE WITH OLIVE OIL AND GREEK YOGURT
This is a terrific and easy mango cake recipe that turned out even better than I expected. The mix of olive oil and butter along with the Greek yogurt is what I think makes this cake incredibly moist and flavorful. It's great for using overripe mango or even mango that isn't as sweet as you had hoped.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform cake pan.
- Beat sugar, butter, and olive oil together in a large bowl until light and fluffy, 3 to 5 minutes. Mix in egg and brandy.
- Combine flour, baking powder, baking soda, salt, and cinnamon in a separate bowl. Mix flour mixture into the wet ingredients alternately with yogurt and milk, stirring just until combined. Gently fold in mango. Spread into the prepared pan; batter will be thick.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

FRESH MANGO BREAD
I make lots of these during mango season and give away to friends and family. It's great for breakfast or afternoon snack! Sometimes I even stick it in the toaster for a different texture.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
- Sift flour, baking soda, cinnamon, and salt together in a large bowl; make a well in the center.
- Whisk eggs, butter, sugar, and vanilla extract together in a separate bowl. Fold mango, coconut, and walnuts into the egg mixture; pour resulting mixture into the well in the center of the flour and mix well. Pour batter into prepared loaf pans and let sit at room temperature for 20 minutes.

VANILLA YOGURT YEAST BREAD (ABM)
From my Bread Maker's Bible, this looks like an interesting yeast bread like I haven't seen before. The only things I did different was use 1/3 cup plain yogurt instead of sour cream (it was originally called Vanilla Sour Cream Bread) and regular AP flour instead of bread flour since the lighter texture is more becoming to the vanilla, best served as a soft bread. The next time I made it, I upped the sugar to 1/4 cup, baked in the machine using the Sweet cycle, and it came out DIVINE! It has light flaky crust but the bread has plenty of body. It is sweet without being too sweet, and chocolate chips and/or dried fruit and nuts would be wonderful additions to bake in this! I loved it plain, but it was delicious with Nutella too!

HEALTHY MULTIGRAIN YOGURT & SEED BREAD (BREAD MACHINE/ABM)
I based this off another yogurt bread recipe I found but made a whole bunch of tweaks. Using that King Arthur white-wheat flour is ideal but regular AP flour will do as will bread flour if you omit the wheat gluten. Hence I put in AP flour for the other flour type. Feel free to use a wheat or wholegrain setting on your bread machine but I prefer to bake this in the oven because it comes out with far better texture. Vegans, you can easily make this vegan using soy or almond yogurt and Earth Balance/Soy Garden. Regardless, it needs the yogurt or yogurt-like substance and a solid fat for the texture, oil won't do. This is also a versatile recipe, use any seeds and grains you like!! Like subbing sunflower for pumpkin seeds, amaranth for quinoa, etc. So long as there's 5-6 tablespoons, you're good. Feel free to try a mix or just one grain/seed! I put down prep time as 90 minutes since that's how long my dough cycle is.

- Put these ingredients into your bread machine in this order, or the order recommended by your manufacturer, then do a basic dough cycle. Set to 2-lb capacity.
- When the dough cycle's finished, the result should be a nice brown glob of dough flecked with seeds, grains, and whatever else you put inches It should be very easy to mold and roll out but if it isn't, knead it on a floured surface until you can roll it out easily.

Omit the wheat gluten if using bread flour. This one can somewhat fit into a loaf pan, but I prefer using parchment paper and a cookie sheet for flexibility. If you're like me and have qualms/intolerances towards MSG, Simply Organic makes a French Onion Dip mix envelope that's pretty much the same thing.
