Mangonadas are similar to smoothies. They are sweet, salty, tart, and fruity. A definite cool-down drink for those hot summer days. And a great way to use up fresh ripe mangos.

Steps:
- Place 1 teaspoon chamoy on a plate. Place 1 teaspoon chili-lime seasoning on another plate. Dip rim of glass first in chamoy, then in chili-lime seasoning. Set aside.
- Combine frozen mango, water, and lime juice in a blender; blend until smooth.
- Place 1/2 tablespoon chamoy in the bottom of the glass. Add 1/2 teaspoon chili-lime seasoning and 1/2 of the blended mangoes. Repeat layers and top with diced fresh mango.

GINGER LIMEADE

Steps:
- Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
- Add sugar and lime juice.
- Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
- Pour into bottles and refrigerate. Chill well.
- When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
- Serve garnished with a mint leaf.
MANGO GINGER LIMEADE
Just dreamed up this tropical concoction while cleaning my fridge. As in most of the Caribbean and the equatorial tropics, an overabundance of mangoes and mandarina limes was the greatest factor. Mandarina's are a funky-looking lime that grows in Costa Rica. They taste like a very, very sour mandarin orange. I'm sure you could use regular green limes or key limes. UPDATE: just tried this with a little bit of dark rum and boy, does it taste good!!!

- Combine all ingredients in a jug with a snug lid and shake until sugar dissolves.
- Pour over ice and serve.
- NOTE: To make mango puree, squeeze ripe mangoes by hand over a sieve, using a spoon to mash mangos through the screen.
SPARKLING MANGO LIMEADE

Yield Makes about 5 1/2 cups limeade purée.

- Peel mangoes and cut flesh from pits. In a blender purée mango flesh with lime juice, water, and 1 cup sugar until smooth.
- Force purée through a sieve into a pitcher or bowl, pressing on any solids. Chill purée, covered, until cold and stir in additional sugar. (Purée will be slightly thick. Limeade purée keeps, covered and chilled, 2 days.)
- Fill tall glasses with ice and add enough limeade purée to fill each glass by three quarters. Top off drinks with seltzer water or club soda, stirring well, and garnish with lime wedges.
LEMONGRASS LIMEADE
Limeade made with lemongrass and fresh ginger from the Moosewood Cookbook. I like to use the remaining top of the cleaned lemongrass stalk as a decoration in the pitcher for serving. Note: I estimated cooking time for making syrup and chilling time.

Steps:
- Take one stalk of lemongrass and trim to 6 inches and remove the dry outer layer. Place stalk on a cutting board and use the flat side of a heavy knife to crush it enough to release its fragrant oils. Cut the lemongrass into 1-inch lengths.
- Combine the lemongrass, ginger, sugar, and 1 cups of the water in a saucepan. Bring to a boil, lower the heat, and simmer for 10 minutes. Stir occasionally.
- Remove the syrup from the heat. Cool for 10 minutes. Strain it into a pitcher. Discard the ginger and the lemon grass.
- Add the lime juice and the remaining 41/2 cups water to the pitcher. Chill for 25 minutes. Serve over ice.
