VERMONT MAPLE COOKIES

I created this recipe after tasting maple cookies with a maple glaze at a bakery in Stowe, Vermont, some years ago. I get many requests to bring them for bake sales, parties and ski trips. -Delores Day, Wolcott, Vermont

Vermont Maple Cookies image

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and maple flavoring. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips and pecans., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool completely. , For glaze, in a saucepan, melt butter over medium heat. Remove from heat. Gradually beat in confectioners' sugar, syrup and maple flavoring until smooth., Drizzle over cookies; let dry completely. Store between pieces of waxed paper in airtight containers.

Steps:

  • Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the maple syrup, egg, vanilla and maple extract. (The mixture may look curdled.) Reduce the mixer speed to medium low; add the flour mixture and beat until combined. Cover and refrigerate until the dough is no longer sticky, about 30 minutes (it will still be soft).
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Coat 2 baking sheets with cooking spray. Put the turbinado sugar in a shallow dish. Roll tablespoonfuls of the dough into 1-inch balls, then roll in the turbinado sugar. Press a walnut half into the center of each cookie and arrange 2 inches apart on the prepared baking sheets.
  • Bake, switching the pans halfway through, until the edges of the cookies are set but the centers are still soft, 12 to 14 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

Steps:

  • In a large bowl, whisk together 1 cup of the flour, the oats, baking powder, cinnamon, salt and baking soda.
  • In a medium bowl, whisk together the remaining 1/4 cup flour, the maple syrup, melted butter, vanilla extract and egg until smooth. Stir the wet ingredients into the dry and blend well. Stir in the chocolate, pecans and raisins if using. Cover the bowl and chill in the refrigerator until very firm, 1 hour.
  • Position a rack in both the upper and lower thirds of the oven, and preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Use a 1-tablespoon measuring spoon to portion the dough onto the prepared baking sheets-15 cookies per sheet, evenly spaced. Sprinkle with turbinado sugar if using.
  • Bake until lightly golden on the outside but still slightly soft in the centers, about 12 minutes, being careful to not over-bake. Cool on the baking sheets for about 5 minutes, then transfer the cookies to wire racks to cool completely. Store in an airtight container for up to 1 week.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Combine almond flour, dates, cherries, walnuts, chia seeds, baking soda, and sea salt in a large bowl; whisk to blend. Add coconut oil, egg, maple syrup, and vanilla extract; blend well with a spoon or fork until dough comes together.
  • Scoop dough onto prepared baking sheets with a small cookie scoop.

Steps:

  • 1. Using a mixer cream together sugars with butter and crisco.
  • 2. Add eggs one at a time
  • 3. Toss in the extracts-soda and buttermilk powder with salt. Add in Flour and beat until mixed well. Refrigerate covered about 1 hour.
  • 4. Roll large walnut size balls.Bake 350 F for about 10-11 min. May look slightly not cooked all the way-this is good. Leave cool on sheet pan a few minutes. Transfer to wire rack to cool completely.
  • 5. Mix icing ingredients and beat well to fluffier. Top each cookie and decorate with a walnut

3/4 c sugar
1/2 c brown sugar, lightly packed

1/2 tsp buttermilk powder

Steps:

  • 1. Mix all filling ingredients together and set aside.
  • 2. Place flour, baking powder and salt in a bowl.
  • 3. Beat butter and sugar in mixer and add eggs and raisins.
  • 4. Add the flour mixture and milk to butter mixture - alternating.
  • 5. Turn dough onto floured surface. Shape into a ball and cut into four pieces.
  • 6. Roll one piece of dough into a 12 inch log on floured surface. Take a rolling pin and very gently roll the log into a 5" x 12" rectangle.
  • 7. Place 1/4 of the filling along the bottom edge of the dough and fold the top edge of the dough over the filling. Pinch the seems and flatten the rectangle a little with your hands - making a "package".
  • 8. Cut the dough vertically into 1" pieces. You'll wind up with about 12 pieces.
  • 9. Hold each cookie piece in hands and twist twice away from your body. Place on cookie sheet and press the ends of each cookie down onto the cookie sheet.
  • 10. Bake at 350 degrees for 20 minutes. They do not brown.
  • 11. Repeat with other four pieces of dough.
  • 12. Mix icing ingredients in bowl.
  • 13. When the cookies are cool, top with icing. I just use my finger to "paint" the icing on top.
  • 14. Now...(and this is important)...make a cup of tea, take two cookies and sit in your special chair. Eat and sip....or do what I do...dunk and eat. OMG - you will be so happy!!!!!

5 c walnuts chopped in blender
1 stick butter (room temperature)
1/3 c brown sugar
1/4 tsp maple flavoring (if you can't find maple flavoring, you can use vanilla)
DOUGH
4 c flour
4 tsp baking powder
1 tsp salt
2/3 c butter
1/2 c sugar
2 eggs, beaten
1 1/2 c raisins
1 c milk
ICING (MEASUREMENTS ARE APPROXIMATE)
1 c powdered sugar
2 Tbsp milk
1 tsp vanilla

Steps:

  • Heat oven to 350°F. In 8-inch square pan, bake pecans 6 to 8 minutes, stirring occasionally, until light brown. Spread nuts on cutting board; cool 5 minutes. Finely chop.
  • In large bowl, beat butter and brown sugar with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in 1/2 teaspoon maple flavor and the egg until well blended. Stir in flour and chopped toasted pecans.
