MAPLE PECAN BUTTER

Maple Pecan Butter image

Steps:

  • Sauté shallots in one tablespoon of the butter until caramelized and almost crisp, and allow to cool.
  • Fold all ingredients together and chill.
  • When almost firm, place flavored butter onto wax paper and roll into a log.
  • Seal in plastic wrap and refrigerate or freeze until needed (can cut off portions of the roll and keep the rest frozen).
  • Let butter soften before using for best flavor.

1/2 cup unsalted butter, softened
2 medium shallots, minced
1/4 cup toasted chopped pecans
1 tablespoon maple syrup
1 teaspoon chopped fresh thyme
1/8 teaspoon salt

Maple Pecan Tarts image

Steps:

  • In a large bowl, cream butter and cream cheese until smooth. Gradually beat flour into creamed mixture. Shape into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to handle., Divide dough into 12 portions. Roll each portion into a 5-in. circle; transfer to 12 ungreased 4-in. fluted tart pans with removable bottoms. Trim crust even with edges. Refrigerate 20 minutes. Preheat oven to 375°., Meanwhile, in a large bowl, whisk the first 6 filling ingredients. Pour into tart shells; arrange pecans over tops. Bake 25-30 minutes or until centers are just set (mixture will jiggle). Cool on wire racks. If desired, serve with ice cream. Refrigerate leftovers.

  • Preheat oven to 350 degrees F. Evenly spread pecans on an ungreased baking sheet. Toast pecans in oven for 7-9 minutes, being careful not to burn nuts. Mine were perfectly toasted at 8 minutes. Remove from oven and allow nuts to cool for a few minutes.
  • Add pecans to food processor and process for 5-10 minutes, scraping down the sides as necessary. At this point the pecan should start to clump together. Continue to process until you reach the desired consistency.
  • Add in maple syrup, cinnamon, vanilla, and salt and process again until smooth. If the nut butter starts to thicken up too much, you can add 1-3 teaspoon of coconut oil and process again until smooth.
  • Transfer to mason jar or container and store at room temperature or in fridge. If you store at room temp, simply give the pecan butter a stir before you use it.
