MAPLE SYRUP CRYSTALS

Great for sprinkling into pancakes or onto muffins/cookies and other treats. Be very careful not to burn yourself. Great when used in Recipe #348557 Use real maple syrup - pancake syrup is watered down and just wont crystallize the same! There is NO REAL USE for the water in the ingredients list, don't mix water in! I just needed two ingredients to post the recipe

Maple Syrup Crystals image

Steps:

  • Pour syrup in pre-heated skillet over medium flame.
  • When bubbly, stir constantly and cook another 4 minutes.
  • Pour into silicone baking pan (never tried anything else, so use something else at your own caution shouldn't be enough to fill entirely, you need room to work it).
  • before completely cooled (but no longer scalding!) gently stretch out to thin and add air into it.
  • It should be a tacky taffy/candy like consistency at this time.
  • Pull into a long thin rod (or a couple rods - no science here).
  • Once hardened, crack and store in a air tight container - store in a cool place.
  • Sprinkle on things as you please!

I love love love the Mc Griddle, but no recipe even came close! The secret apparently is Maple Syrup crystals which can be made using Recipe #348532 or using this recipe. I cannot take credit for the pancake recipe - its my favorite Recipe #25690

Steps:

  • Crystals:.
  • Put small amount of sugar on plate.
  • Add one drop of water (or flavoring), and roll sugar into a tiny, less then pea sized ball. Repeat until you have about 6-8 balls per pancake, depending on what you desire.
  • fry bacon and leave to drain on paper towels.
  • Take egg beaters and make 5 small egg patties in one of two ways : A -Use a coffee mug and cook 1/4 cup beaters in microwave until set or stove top using a small pancake form, set aside.

  • Beat egg until fluffy.
  • Add milk and melted butter.
  • Add dry ingredients and mix well.
  • Heat griddle until a drop of water sizzles and dances.
  • pour 1/5 - 1/4 cup batter into skillet (think coffee mug sized) and press crystals into the top of the batter.
  • cook until bubbly and turn. You should get 10 small pancakes.
  • When done, arrange as follows:.
  • Pancake, egg, 3 slices bacon, 1 piece cheese, pancake to make 5 sandwhiches.
  • Cook on griddle until cheese is melted.
  • ENJOY!

2 tablespoons butter, melted
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup maple sugar (king arthur sells this)
1/4 cup water (approx)
maple flavoring (optional)
1 1/4 cups Egg Beaters egg substitute (or 5 beaten eggs)
15 slices bacon (or 5 sausage patties or whatever meat desired)
5 slices cheddar cheese

  • Before you start the maple sugar, line a baking sheet with parchment paper or a silpat if you have one. Set aside.
  • Pour the syrup in a small pot and put over medium heat. Bring to boil, stirring frequently. Once it starts to boil heavily, make sure you keep stirring to keep it from attaching to the pot.
  • After a minute, check the temperature if you have a thermometer. When the syrup reaches about 230ºF it will begin to “calm down” and be less frighteningly lava-like. You should notice it get slightly darker, as well.
  • Two-three minutes later: Once it’s gotten quite dark and just when you notice a twinge of caramel-smell, remove from heat. At that point it should be 265ºF on a thermometer.
