Steps:
- Rub the rim of 4 rocks glasses with lime; dip in coarse salt. Fill three-quarters of the way with ice. Combine 1 cup tequila, 2/3 cup fresh lime juice, 1/3 cup orange-flavored liqueur and 2 teaspoons superfine sugar in a cocktail shaker. Shake well, then pour into the glasses. Garnish with lime.

THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

Steps:
- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

REAL MARGARITAS

- If you like margaritas served in a glass with salt, rub the outside rims of 6glasses with a cut lime and dip each glass lightly into a plate of kosher salt.
- Combine the lime juice, lemon juice, Triple Sec, tequila, and ice in a blender and puree. Place extra ice in a cocktail shaker. Fill with margarita mix, shake well, and strain into glasses.

- Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
- Blend together lime, salt and sugar in a small blender or mini food chopper.

- Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers; cook until well browned and a thermometer reads at least 160°, about 1 minute. Repeat with remaining beef. Remove from skillet; wipe skillet clean., Combine mayonnaise and salsa; reserve half for serving. Spread remaining mixture over tortillas. On the center of each tortilla, place 1 slice cheese, 1 burger and 1 tostada shell. Fold sides of tortilla over burger; fold top and bottom to close, pleating as you go., In batches, place wraps in skillet, seam side down. Cook on medium heat 1-2 minutes on each side or until golden brown. Serve with remaining sauce.

MARGARITA BURGERS
Steps:
- Assembly Mix all burger ingredients in a medium bowl. Add salt to taste, there will be salt on the buns. Form four patties to fit the shape of the Ciabatta rolls. Mix the marinade ingredients into a shallow dish which can hold the four patties in one layer. Marinate at least two hours. Turn patties if not covered by the marinade. Grill or broil patties for desired doneness, 3 minutes per side for medium rare, up to six minutes per side for charcoal. While patties are cooking, cut ciabatta rolls in half lengthways, brush the tops with the melted butter and cover liberally with salt. Place under broiler for one minute to set the salt in place. Place one patty in each roll. Serve with your choice of salsa and tortilla chips, jalapenos optional.
