WATERMELON MARGARITA POPS

Icy watermelon wedges with a sweet-sour-tequila punch, these gorgeous party-friendly pops are perfect for staving off summer's heat. A sprinkle of chile powder before serving adds a bonus layer of flavor.

Watermelon Margarita Pops image

Steps:

  • Pierce the rind of each watermelon wedge with the tip of a paring knife to make a 1/2-inch-wide slit that is about 1 inch deep. Combine the tequila, lime juice and agave in an extra-large resealable plastic bag. Add the watermelon, seal the bag and turn it over gently to combine. Refrigerate, turning over once more halfway through, for about 1 hour.
  • Line 2 baking sheets with wax paper. Insert an ice-pop stick into the slit of each watermelon wedge. Put on the prepared baking sheets and freeze until solid, 4 hours to overnight. Serve with lime wedges and chile powder.

1 small watermelon (about 4 pounds), cut into 1-inch-thick wedges
7 ounces blanco/silver tequila
1/2 cup lime juice, plus lime wedges, for serving
1/2 cup light agave nectar
Chile powder, for serving

Frozen Melon-Margarita Pops image

Steps:

  • Stir together tequila, Grand Marnier, fresh lime juice, and coarse salt in a large bowl. Cut cantaloupe and watermelon into wedges. Soak in tequila mixture for 15 minutes. Insert ice-pop sticks into wedges. Freeze on a rack-lined baking sheet for 1 hour. Serve with nasturtiums.

3/4 cup tequila
1/2 cup Grand Marnier
1/2 cup fresh lime juice
Pinch of coarse salt
8 ounces cantaloupe, rinds removed
8 ounces watermelon, rinds removed
Nasturtiums, optional

Steps:

  • Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves.
  • Remove from heat and allow to cool.
  • Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth.
  • Pour into the cups (Dixie) and cover the top of each cup with foil.
  • Place the popsicle stick in center of cup (down through foil, which will hold it in place).
  • Freeze until hard, preferably overnight. Remove from freezer and run cup under warm water to loosen popsicle.
  • Garnish with kosher salt and serve. Enjoy!

Steps:

  • Pour the tequila into a tall and narrow glass. Remove the frozen pops from their wrappers and submerge them 1 by 1 in the glass of tequila, tilting the glass to completely moisten the entire pop. Press the side of the pop into the sauce. Serve immediately.
