MARINARA & MOZZARELLA MEATLOAF

This is my family's favorite recipe for meatloaf, I usally make this once a week..my favorite too!

Marinara & Mozzarella Meatloaf image

Steps:

  • 1. Preheat oven to 350 degrees and ready a nonstick 9x5 loaf pan for baking. or spray a regular loafpan with nonstick cooking spray. ( I use a nonstick pan because I dont like to use cooking spray).
  • 2. In a large bowl, mix the ground beef, 1 cup of marinara sauce, diced red onion, eggs, parmesan cheese, italian seasoning, and salt and pepper.(this is easiest to mix with your hands.)
  • 3. Evenly fill loaf pan with meatloaf mixture, patting with your hands to form an even top. Bake uncovered for 45 minutes.
  • 4. Remove loaf pan from oven, drain excess fat or liquid, and then top with remaining 1/2 cup of marinara sauce, and all the mozzarella cheese. return to oven and bake an additional 30 minutes, or until meat thermometer reads 165 degrees. drain fat from pan once more and let rest for 10 minutes before cutting into 8 equal slices.

2 lb lean ground beef
1 1/2 c marinara sauce
1/4 c diced red onion
3 large eggs
1 c grated parmesan cheese
1 tsp italian seasoning
1/2 tsp each of salt and pepper
1 c shredded mozzarella cheese

MOZZARELLA MARINARA

This is different than others. The convenience of egg roll wrappers, and string cheese takes the form of mozzeralla sticks, and a clean tasting marinara sauce is not overly spiced like some other sauces we've all had. From our home to you and yours. The yield is 2 dozen mozzarella sticks and 3 cups of sauce, I'm estimating 12 servings which will provide 2 apiece, adjust accordingly.

Steps:

  • In a large asucepan, saute onion and garlic in olive oil. Add the tomatoes, tomato paste, water, sugar, salt and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes, or until thickened.
  • Meanwhile, place an egg roll wrapper on a work surface with point facing you. Place a piece of cheese near the bottom corner. Fold bottom corner of wrapper over cheese; roll up just until cheese is enclosed. Fold sides of wrapper over the top. Using a pastry brush, wet the top corner with water. Roll up TIGHTLY, forming a tube. Repeat.
  • In an electric skillet or deep fat fryer, heat oil to 375'. Fry mozzarella sticks, a few at a time, for 1 minute or until golden brown, turning occasionally. Drain on paper towels, or heavy brown paper bag. Discard bay leaf from marinara sauce. Serve with mozzarella sticks.

  • Combine beef, eggs, crumbs, milk, Parmesan cheese, onion, salt and oregano, mixing lightly but thoroughly. Shape into a loaf and place in a greased 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours or until no pink remains; drain. , Spoon pizza sauce over loaf and top with mozzarella cheese slices. return to oven for 10 minutes or until the cheese is melted. , Meanwhile, if desired, saute green pepper and mushrooms in butter; arrange on top of meat loaf. Sprinkle with parsley if desire.

Steps:

  • 1. Preheat oven 375 degrees. Grease or spray a large, glass bread dish or an oblong glass or aluminum dish (9x12). Mix ingredients and place on top of wax paper on the counter. Shape into a rectangle. Drain mushrooms and sprinkle evenly over hamburger. Distribute shredded mozarella on top of the mushrooms, and press gently into the meat.
  • 2. Lift wax paper with both hands on short side and roll until you reach the other end. Wet hands and tuck in the ends and seal. Lift wax paper and slide into dish so seam side is on bottom of dish.
  • 3. Cook for 1/2 hour. Remove and drain any grease off. Take remainder of tomato sauce and pour evenly over top of meatloaf. Bake for 1/2 hour more.
  • 4. Remove and let rest for 10 minutes. Remove meatloaf to a serving platter (I use two spatulas). Slice and serve. Deliciosi!!!

1/2 c bread crumbs, dry
1 tsp oregano, dried
1 tsp salt
1 egg slightly scrambled
1 tsp pepper (optional)

4 oz sliced, canned mushrooms, drained
