This recipe makes strong lemonade or limeade that can tolerate dilution by an afternoon's worth of added ice.

- Into a large serving container, strain the citrus juice, mix it with sugar, and stir until the sugar is dissolved. Add 4 cups cold water and cranberry juice, if using, and stir again until well combined. Add ice to fill and a few lemon or lime slices.
CLASSIC HOMEMADE LEMONADE
Serve classic lemonade by itself, or blend it with raspberries and sparkling water for our Sparkling Raspberry Lemonade. Add vodka and -- ta-da!-- a raspberry-lemonade Vodka Collins.

- Put butter and 1/3 cup confectioners' sugar in the bowl of an electric mixer fitted with the whisk attachment, and mix on medium speed until pale and fluffy. Add lime zest and juice and vanilla, and mix until fluffy.
- Whisk together flour, cornstarch, and salt in a bowl. Add to butter mixture, and mix on low speed until just combined.
- Divide dough in half. Place each half on an 8-by-12-inch sheet of parchment paper. Roll in parchment to form a log 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log. Refrigerate logs until cold and firm, at least 1 hour.
- Preheat oven to 350 degrees. Remove parchment from logs; cut into 1/4-inch-thick rounds. Space rounds 1 inch apart on baking sheets lined with parchment paper. Bake cookies until barely golden, about 13 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool slightly, 8 to 10 minutes. While still warm, toss cookies with remaining 2/3 cup sugar in a resealable plastic bag. Cookies can be stored in airtight containers at room temperature up to 2 weeks.
SPARKLING LIMEADE
This beverage is perfect for a sprinkler party because of its ocean-green color. Make this sparkling limeade for a delicious and refreshing drink.

- Combine sugar and water in a small saucepan; place over medium heat. Cook, stirring occasionally, until sugar has completely dissolved, about 5 minutes.
- Remove from heat; transfer to an ice bath to cool, or let stand at room temperature until cool. Stir in lime juice. Fill large pitcher with ice, pour in the limeade, and top with seltzer. Stir well and serve.

- Roll the limes back and forth over the counter with the palm of your hand.
- Cut limes in half, and juice them by hand or with a juicer. Reserve rinds.
- You should have about a 1/2 cup of juice. Transfer juice and rinds to a large pitcher.
- Bring 1 cup of water to a boil in a small saucepan.
- Add sugar or honey and stir until dissolved.
- Pour syrup into the pitcher, and add 4 cups water.
- Stir until well blended.
- Add more sugary or honey if desired.
- Refrigerate 1 hour. Discard rinds.
- Serve limeade garnished with lime slices.

- In a small saucepan, combine sugar and 2 1/2 cups water. Bring to a boil over medium-high heat, stirring until sugar is dissolved. Remove from heat; let cool.
- In a punch bowl or large container, combine the lemon juice, sugar syrup, remaining 4 cups water, and ice. Stir well to combine. Thinly slice remaining lemon, and add to lemonade. Serve.
LIMEADE WITH MINT
Steps:
- Combine 1/2 cup sugar and 1/2 cup water in a small saucepan over high heat. Bring to a boil, stirring to dissolve sugar. Transfer to refrigerator to chill, about 20 minutes. In a blender, combine syrup and mint, and puree. Strain through a fine mesh sieve into a small bowl.
- In a pitcher, combine lime juice, remaining 1/2 cup sugar, and 1 quart water. Stir until sugar is dissolved. Fill glasses with ice. Divide syrup evenly between glasses. Pour limeade over ice. Garnish with mint sprigs and lime wheels. Serve immediately.
SUMMERTIME SPARKLING LIMEADE
this sparkling limemade is a classic drink for the hot weather. To make margaritas with this recipe, simply replace the quart of seltzer water with 2 cups tequila, and salt the rims of the glasses. Serve over lots of ice. Makes 4 3/4 cups.

- In a resealable plastic bag, combine lime juice, soy sauce, scallions, ginger, and red-pepper flakes. Add steak, and seal bag (place in a dish to catch any leaks); marinate in the refrigerator, turning occasionally, up to 1 hour.
- Heat grill to high; lightly oil grates. Remove steak from marinade, letting excess drip off (discard marinade); season with salt and black pepper. Place on grill; cover. Cook, turning once, until meat reaches desired doneness, 6 to 8 minutes for medium-rare. Let rest 10 minutes before slicing thinly.
